Why do we love this wine?

Sorby Adams is one whose reds we have adored, and as we dabble into some whites we're continually astounded by how good these wines are. Having been head winemaker at Yalumba for 20 years, he certainly knows how to make top quality vino. This chardy is genuinely unbelievable value for money: texturally it flows on the palate like a plush peach. Time on lees has meant that it has a yoghurty, creamy consistency and the finish is ever so delightful. I'm really damn excited about this wine, and I reckon you will be too Mofo.

Frequently Asked Questions

This wine represents the expertise of a former Yalumba head winemaker with 20 years of experience, delivering premium techniques at an accessible price point. The extended lees contact creates complex textures and creamy mouthfeel typically found in much more expensive Chardonnays. South Australian fruit combined with skilled winemaking delivers restaurant-quality wine without the markup.

Extended time on lees gives this Chardonnay its distinctive yoghurty, creamy consistency and plush texture that flows like peach on the palate. This traditional French technique involves leaving the wine in contact with dead yeast cells, which adds complexity, richness, and that coveted creamy mouthfeel. It's a hallmark of quality Chardonnay production that elevates the wine's overall sophistication.

The creamy, oaky profile with tropical fruit notes makes this perfect for roasted chicken, lobster with butter sauce, or creamy pasta dishes. The medium body and textural richness can stand up to richer seafood like salmon or even pork tenderloin. The tropical fruit elements also complement Asian fusion cuisine, particularly dishes with coconut or mild curry flavours.

This represents the modern Australian Chardonnay style that balances fruit expression with sophisticated winemaking techniques. Unlike the heavily oaked styles of the past, this shows restraint while still delivering complexity through lees work. South Australian Chardonnay often exhibits this perfect balance of tropical fruit and creamy texture, making it more approachable than cooler climate styles while maintaining elegance.

Serve this Chardonnay at 10-12°C to showcase its creamy texture and tropical fruit flavours without masking the subtle oak integration. While delicious now, the 2023 vintage has the structure to develop beautifully over 2-3 years, allowing the lees-derived complexity to integrate further. The quality winemaking suggests it will reward those patient enough to cellar it, though its immediate appeal makes waiting difficult.
