This chardonnay is sourced from an organic vineyard and put through a painstakingly gentle process to remove the alcohol whilst keeping all the vinous goodness. And it fully tastes the part - citrus, apple, melon and bright acid with nice palate weight and texture. A new way to enjoy chardonnay.

The gentle alcohol removal process preserves the wine's essential character while concentrating certain flavour compounds. You'll still experience the classic chardonnay notes of citrus, apple, and melon, but the absence of alcohol allows the fruit flavours to shine more prominently. The process also maintains the wine's natural acidity and body, creating a surprisingly authentic chardonnay experience without the warming sensation of alcohol.

Unlike grape juice, this starts as fully fermented wine before undergoing alcohol removal, preserving the complex flavours developed during fermentation. The organic grapes undergo the complete winemaking process including malolactic fermentation, which creates the characteristic buttery notes and full body associated with quality chardonnay. This maintains the wine's sophisticated palate weight and texture that you simply can't achieve with unfermented grape products.

The full-bodied character comes from the wine's retained glycerol, residual sugars, and extracted compounds from the organic grapes and winemaking process. Traditional chardonnay winemaking techniques like lees contact and possible oak treatment contribute to the wine's texture and mouthfeel. The alcohol removal process specifically targets ethanol while preserving these body-building components, resulting in a wine that maintains the substantial palate presence chardonnay lovers expect.

Serve chilled at 8-10°C in proper wine glasses to fully appreciate its aromatics and texture. The bright acidity and citrus notes make it excellent with seafood, particularly grilled fish or creamy pasta dishes. Its full body can handle richer foods like roasted chicken or soft cheeses, while the fresh, juicy style also complements Asian cuisine and spicy dishes where alcohol might compete with delicate flavours.

NV stands for 'Non-Vintage', indicating this chardonnay is blended from grapes harvested across multiple years rather than a single vintage. This approach allows the winemaker to maintain consistent flavour and quality year after year, which is particularly important for zero-alcohol wines where the removal process can vary slightly between batches. The blending ensures you get the same reliable citrus, apple, and melon profile every time you purchase.
