Why do we love this wine?

This is a great example of letting the grape variety shine and it took some real care in the vineyard and the winery to accomplish. Picked in the cool of the early morning hours then racked to tank with some solids added for fermentation. The juice is separated with the majority placed in French oak to ferment and the rest kept to committed to tank. Post fermentation, bâtonnage is introduced to bring an extra textural element and build flavour. The result is a quintessential Margaret River chardonnay with richness, complexity and a lengthy, but not flabby, finish.

Margaret River's unique maritime climate and limestone soils create ideal conditions for elegant Chardonnay production. This wine showcases the region's signature style through careful vineyard management and split fermentation - part in French oak, part in tank - which balances richness with freshness. The cool morning harvest and bâtonnage technique add textural complexity while maintaining the bright citrus character that Margaret River is renowned for.

Southern Hemisphere vintages occur during our winter months (February-April), so a 2025 vintage was harvested earlier this year. This Chardonnay has had sufficient time to complete fermentation, undergo bâtonnage for texture development, and achieve the balance between oak and fruit that defines quality Margaret River Chardonnay. The 'Killer Vintage' rating suggests 2025 provided exceptional growing conditions.

The wine's medium body and creamy texture from French oak fermentation make it perfect for seafood dishes like lobster thermidor or pan-seared scallops. The citrus and grapefruit notes complement chicken in cream sauces, while the oak influence pairs beautifully with soft cheeses like brie or camembert. The lengthy finish also makes it suitable for richer vegetarian dishes featuring mushrooms or roasted vegetables.

Bâtonnage is the French technique of stirring the wine's lees (dead yeast cells) during maturation, which adds creamy texture and enhances flavour complexity. In this Chardonnay, it creates the smooth, rich mouthfeel while building layers of flavour beyond simple fruit characteristics. This traditional method, combined with partial French oak fermentation, gives the wine its sophisticated texture and helps integrate the oak with the natural citrus and grapefruit flavours.

Serve this wine chilled at 10-12°C to highlight its citrus freshness while allowing the creamy oak characters to shine through. Store bottles on their side in a cool, dark place away from temperature fluctuations. While this Chardonnay is drinking beautifully now with its rich, complex profile, quality Margaret River Chardonnays can develop additional honeyed notes over 2-3 years if properly cellared.
