The producers of this wine have put a lot of thought in, so you don't have to. Chardonnays like this are all about balance, and there is *a lot* to balance here: Oak richness, ripe stone fruit and vibrant acidity, not to mention wonderful floral and citrus notes. But as we said, they've put all the thought in - you just enjoy yourself.

Why do we love this wine?

This is a great example of letting the grape variety shine and it took some real care in the vineyard and the winery to accomplish. Picked in the cool of the early morning hours then racked to tank with some solids added for fermentation. The juice is separated with the majority placed in French oak to ferment and the rest kept to committed to tank. Post fermentation, bâtonnage is introduced to bring an extra textural element and build flavour. The result is a quintessential Margaret River chardonnay with richness, complexity and a lengthy, but not flabby, finish.

Frequently Asked Questions

Margaret River's unique maritime climate and gravelly soils create ideal conditions for producing elegant, complex Chardonnays that balance richness with natural acidity. This wine showcases the region's signature style through careful vineyard management and a combination of French oak fermentation with tank fermentation, creating layers of flavour while maintaining the grape's inherent character. The cool morning harvest and bâtonnage technique further enhance the wine's textural complexity, making it distinctly Margaret River in its refined approach to full-bodied Chardonnay.

The split fermentation technique - with most juice fermenting in French oak and the remainder in tank - creates a beautiful marriage of creamy oak influence and fresh fruit purity. The addition of solids during fermentation and post-fermentation bâtonnage (lees stirring) builds the wine's signature creamy texture while developing complex flavours like cashew and enhancing the tropical fruit notes. This careful balance prevents the wine from becoming overly oaked while ensuring it develops the rich, lengthy finish that Margaret River Chardonnays are renowned for.

The wine's rich texture and complex flavour profile make it perfect for creamy seafood dishes like lobster thermidor or pan-seared scallops with cauliflower purée. The tropical fruit and lemon zest notes complement Asian-inspired dishes such as coconut curry prawns or Thai-style fish, while the cashew undertones pair beautifully with roasted chicken or pork with almond-based sauces. The wine's full body and lengthy finish can also stand up to soft cheeses and dishes with cream-based sauces.

While this 2023 Chardonnay is absolutely delicious now, showcasing vibrant tropical fruit and fresh lemon zest characteristics, it has the structure and complexity to develop beautifully over the next 3-5 years. Margaret River Chardonnays are known for their ageing potential, and the French oak fermentation and quality winemaking techniques suggest this wine will develop more honeyed, nutty complexity with time. For immediate enjoyment, serve slightly chilled to highlight the fresh fruit flavours, or cellar it to experience how the cashew notes evolve into richer, more integrated flavours.

James Halliday's Five Star rating represents the pinnacle of Australian winery recognition, awarded only to producers who consistently demonstrate exceptional quality across their entire range over multiple vintages. This rating places Moss Brothers among Australia's elite wineries, indicating their commitment to excellence in both viticulture and winemaking. The 'Iconic Producer' status further reinforces their reputation for creating wines that not only represent their region authentically but also set benchmarks for quality, making this Field of Dreams Chardonnay a wine from a truly distinguished producer.
