Godello: like the birth child of vermentino, chardonnay and chenin blanc. Can’t be a bad thing, can it? High acidity and always awash with mineral, oyster-shell qualities. Depending on the maker, this can go from being lean green, to fatty, waxy harmony. We could come up with a many adjectives to describe this wine, and many situations we’d find ourselves in while drinking it. We won’t list them all, but here’s a teaser: succulent, refreshing, interesting, majestic. Pair with scallops grilled with heaps of butter, or around the outdoor table with the best of friends.
