A richer style of sauvignon blanc. This isn't your $5 Marlborough savvy b. More power, more texture, more wine please. Think summer salads, cheese boards, picnics and patio parties. For anyone who's a fan of traditional French 'Fumé Blanc' styles, this is the wine for you.

Why do we love this wine?

This is a serious wine. A beautiful bouquet of lychee, tropical fruits and gooseberry belie the texture and complexity of the wine. On the palate there is plenty going on – there’s complexity, weight, and texture from the time in seasoned oak and no intervention for nearly eight months. A softer, more textural style with the capacity to age and match with a huge array of foods. A wine with personality and one that speaks of time and place.

Frequently Asked Questions

Unlike the crisp, stainless steel fermented Sauvignon Blancs that dominate the market, this wine spends time in seasoned oak and undergoes an extended eight-month maturation without intervention. This creates a more textural, complex style that challenges the conventional perception of Sauvignon Blanc as purely fresh and simple. The result is a wine with greater weight and ageing potential than most examples of the variety.

The Yarra Valley's cool climate and diverse soils allow Sauvignon Blanc to develop complexity beyond the typical grassy notes. Here, the variety expresses tropical fruit characters like lychee alongside traditional gooseberry, while the region's temperature variations help retain natural acidity. This terroir-driven approach results in a wine that truly speaks of its place, showing the sophisticated side of Australian Sauvignon Blanc.

The wine's weight and oak influence make it versatile with richer dishes than typical Sauvignon Blanc. Consider pairing with herb-crusted fish, creamy pasta with seafood, or roasted chicken with lemon and herbs. The textural complexity also complements soft cheeses and dishes with subtle spice, while the underlying acidity still cuts through cream-based sauces beautifully.

Yes, this Sauvignon Blanc has genuine ageing potential due to its structural complexity and oak treatment. While most Sauvignon Blancs are best consumed young, this wine's texture and weight suggest it will develop additional complexity over 3-5 years. The extended lees contact and seasoned oak provide a foundation that will allow the wine to evolve gracefully, developing more integrated flavours and a rounder mouthfeel.

No intervention during the eight-month maturation means the winemaker avoided unnecessary filtering, fining, or stirring, allowing the wine to develop naturally on its lees. This hands-off approach preserves the wine's natural texture and complexity while allowing beneficial compounds to integrate slowly. It's a philosophy that prioritises the wine's authentic expression over technical perfection, resulting in greater depth and character.
