Why do we love this wine?

Gypse is named for the gypsum and marl soils that give this particular expression its distinctive character - richer and more textured than Schaal's Calcaire, with a quiet power and depth that sets it apart. Low yields in 2024 concentrated everything beautifully, producing a wine of electric structure and classic Alsatian balance. Lime, green apple and white florals on the nose, with a subtle salinity and mineral complexity building underneath.
