Why do we love this wine?

Julien Schaal is one of Alsace's most exciting young winemakers - precise, obsessive and completely dedicated to letting exceptional terroir speak for itself. Whole bunch pressing, slow cool fermentation, no malolactic - every decision made to preserve the natural energy and purity of the fruit. This wine is defined by its terroir - ancient limestone soils formed during the Triassic period, perfectly oriented hillsides, and a mineral complexity that you simply cannot find anywhere else on earth. In the glass it's electric. Lime, lemon, grapefruit and white florals on the nose, with a mineral backbone that cuts clean and sharp underneath. The palate is bright, focused and beautifully structured - vibrant acidity, citrus intensity and a long, lingering finish that keeps revealing itself long after the glass is empty.
