Granite soils are prized in premium wine regions like the Northern Rhône and parts of Burgundy for their ability to retain heat during the day and release it slowly at night, promoting even ripening. In Rías Baixas, the sandy-granite composition provides excellent drainage while imparting distinctive mineral notes and what's described as 'electric energy' to the wine. This geological foundation amplifies the natural acidity of Albariño, creating wines with exceptional tension and longevity.

The medium body and textural complexity make this ideal for richer seafood preparations like grilled octopus, lobster thermidor, or creamy seafood risotto.
