Why do we love this wine?

‘Ámbar’ takes a massive step up in quality from their green (Verde) label. There’s more texture, intensity, length and elegance at play. The grapes come from a unique vineyard, planted on a particular sandy-granite soil that made the region famous. Lovingly hand-picked, these albariño bunches head to the winery for 12 hours of skin contact, building flavour and texture into the fermenting juice, then aged on lees for 8 months. With naturally high acidity, the granite soil amplifies the wine, imparting an electric energy, lifting the wine above and beyond. Texture just adds to the feel, built in by lees work enhancing a broader mouthfeel, balanced by freshness and an incredible drive. Wow.

Ripe, yet youthful and pristine, this is a very impressive albariño. The stone-fruit and citrus-blossom aromas are just beginning to open up, but the balance of fruit, minerality and elegant acidity is already spot-on at the very long finish.

This Ámbar label represents a significant quality leap with 12 hours of skin contact and 8 months of lees ageing, techniques more commonly associated with premium white Burgundy. The unique sandy-granite soils of Rías Baixas impart an electric minerality that elevates the wine beyond standard Albariño expressions. The extended lees contact creates a broader, more textural mouthfeel while maintaining the grape's signature freshness and drive.

Granite soils are prized in premium wine regions like the Northern Rhône and parts of Burgundy for their ability to retain heat during the day and release it slowly at night, promoting even ripening. In Rías Baixas, the sandy-granite composition provides excellent drainage while imparting distinctive mineral notes and what's described as 'electric energy' to the wine. This geological foundation amplifies the natural acidity of Albariño, creating wines with exceptional tension and longevity.

The medium body and textural complexity make this ideal for richer seafood preparations like grilled octopus, lobster thermidor, or creamy seafood risotto. The almond and apricot notes complement dishes with nuts or stone fruits, while the citrus backbone cuts through rich sauces. Unlike lighter Albariños that pair with simple shellfish, this wine's structure can handle roasted chicken or pork tenderloin with fruit-based sauces.

Lees ageing is a traditional technique where wine rests on dead yeast cells after fermentation, adding complexity and mouthfeel. For Albariño, which can sometimes be quite linear, this process builds texture and richness while preserving the grape's natural acidity. The extended contact creates subtle nutty, brioche-like flavours that complement the wine's almond notes, while the regular stirring (bâtonnage) integrates these elements seamlessly into the final blend.

Premium Albariños with this level of structure and acidity can develop beautifully for 5-8 years from vintage. The granite minerality and lees-derived complexity will integrate further over time, while the natural high acidity acts as a preservative. Peak drinking is likely 2024-2028, though the wine's sustainable production methods and quality winemaking suggest it could surprise with even longer ageing potential, developing honeyed notes while retaining its characteristic freshness.
