One small step for man and one Giant Step for chardy lovers! Planted on dramatic slopes in premium Yarra Valley soil, this charmer has had a cooler and extended growing season, which has allowed the wine to encapsulate those famous Yarra characteristics. This is very close to the pinnacle of Yarra chardonnay, honestly it doesn't get any better than this. Fantastic stuff.

Don't worry, try one of these

Why do we love this wine?

The fruit has been fermented in indigenous yeast and matured for 10 months in 20% new French oak and 80% older oak barrels. Floral, bright and elegant with zesty citrus and stone fruit flavours, this Applejack chardonnay is one to whip out when the sun is shining. That being said, you can drink this on a cold day too (we don’t discriminate) but we DO recommend being thoroughly parched to allow this crisp, minerally drop to quench your thirst. This pairs perfectly with a healthy (or not so healthy) vegetarian dish.

Frequently Asked Questions

This Applejack Vineyard Chardonnay showcases a more restrained, elegant style through indigenous yeast fermentation and careful oak management - only 20% new French oak versus the heavy-handed approach many producers take. The Yarra Valley's cool climate allows the fruit to retain bright acidity and mineral complexity, creating a wine that balances richness with finesse. This approach reflects the modern Australian movement towards site-specific, terroir-driven Chardonnays rather than the overly oaked styles of the past.

The unanimous acclaim from critics like Huon Hooke (98pts, Australian White Wine of the Year 2025) and Andrew Caillard MW (97pts) reflects the wine's exceptional balance and complexity. Giant Steps' meticulous vineyard management at their single Applejack site, combined with indigenous yeast fermentation, creates layers of flavour that evolve beautifully in the glass. The 10-month maturation period allows the wine to integrate seamlessly, showcasing both the pristine fruit character and subtle oak influence that critics recognise as benchmark Yarra Valley Chardonnay.

While the producer suggests vegetarian dishes, this wine's full-bodied nature and creamy texture make it incredibly versatile with richer preparations. The citrus and stone fruit flavours complement roasted chicken with herbs, while the mineral backbone cuts through creamy pasta dishes or risottos beautifully. The wine's acidity and complexity also make it excellent with seafood like lobster or scallops, and the subtle oak integration won't overpower delicate fish preparations.

Indigenous yeast fermentation allows the wine to express the unique microbial terroir of the Applejack Vineyard, creating more complex flavour development than commercial yeasts would achieve. This natural process often results in a slower, more controlled fermentation that preserves delicate aromatics and adds textural complexity. The technique contributes to the wine's distinctive mineral character and helps integrate the oak more seamlessly, resulting in the elegant, site-specific expression that has earned such critical acclaim.

This Chardonnay is absolutely delicious now, showcasing vibrant citrus and stone fruit flavours with beautiful integration of oak and acidity. However, premium Yarra Valley Chardonnays like this often develop additional complexity over 3-5 years, with the fruit flavours evolving towards more honeyed, nutty characteristics while maintaining their mineral backbone. The quality of the vintage and the wine's structure suggest it will reward both immediate consumption and medium-term cellaring, depending on your preference for bright fruit or developed complexity.
