Why do we love this wine?
Hand-sorted, whole-bunch pressed straight into a mix of new and older French oak, left to ferment naturally and without interference. A good portion went through malolactic fermentation too, chasing a tactile, slightly reductive character rather than just a softer mouthfeel. There's already a whisper of chalk and gunflint coming through, and that's only going to build with more time in the bottle.
