Why do we love this wine?

L'Homme Mort is one of the most northerly Premier Crus in Chablis, located within the larger Fourchaume Premier Cru vineyard, the wine made in this small climat share the softer, more rounded characteristics synonymous with Fourchaume, while also possessing a distinctive zingy minerality. It also happens to be one of Domaine Yvon & Laurent Vocoret's most notable vineyards in their holdings, with vines averaging 40 years of age. This beautiful drop strikes a finely tuned balance between ripe stone fruit, acidity and stony notes. Laurent himself recommends enjoying his wines “with scallops or seafood, followed by a red wine from the Rhone Valley with a good rib-eye steak, all around a meal with family or friends” - and I don’t know about you, but that sounds to me like a recipe for a fantastic time.
