Chablis with all the trimmings; lemon pith, ripe lemon flesh, creamy, cheesy, savoury nuance, and deep mineral complexity. It's no wonder the wine world looks to Chablis for chardonnay greatness.

Why do we love this wine?

The complexity of Chablis is unmatched not just in chardonnay but amongst the great wines of the world. There is so much to discover here – a wine brimming with intricacies and curiosities. Slatey mineral drive underpins the acid from start to finish. Rich, shapely fruit gives the wine palate weight and breadth, and the scintillating acid sets the mouth alight. A brilliant wine from a relatively unsung hero of the region.

Decanter

"Bottled after nine months ageing on lees, this has a fine balance between ripe stone fruit on the palate and that attack of acidity and stony notes which keeps everything fresh. A complex Fourchaume that is already quite open and can be enjoyed now. The Vocoret family trace their Chablis roots back to 1713. They have 1.3ha of Fourchaume with the vines averaging 40 years of age." Andy Howard MW, Decanter.

Frequently Asked Questions

Chablis represents Chardonnay in its purest form, grown on ancient Kimmeridgian soils rich in fossilised oyster shells. This unique terroir creates the signature slatey minerality that defines true Chablis, making it distinctly different from buttery, oak-aged Chardonnays found elsewhere. The Vocoret family's traditional winemaking approach preserves these mineral characteristics while allowing the fruit's natural complexity to shine through.

While Chablis boasts famous names like Raveneau and Dauvissat, the Vocoret family has quietly been crafting exceptional wines for generations without the same recognition. Their commitment to traditional methods and intimate knowledge of their vineyard sites produces wines that rival the region's most celebrated producers. This 2022 vintage demonstrates their ability to capture Chablis' essence while offering exceptional value compared to more famous estates.

The slatey mineral character comes from Chablis' unique geological foundation of limestone and clay mixed with ancient marine fossils. This creates a distinctive taste sensation often described as wet stones, crushed shells, or chalk dust that provides backbone to the wine. It's this minerality that gives Chablis its renowned ability to pair beautifully with oysters and other seafood, creating a harmonious echo of the sea.

Serve this Chablis well-chilled at 8-10°C to highlight its crisp acidity and mineral precision. The wine's medium body and textural complexity make it versatile for both aperitif drinking and food pairing. Consider decanting for 30 minutes if serving with richer dishes, as this allows the wine's buttery and lemon notes to integrate more fully with the mineral backbone.

This Chablis excels with classic pairings like fresh oysters, where the wine's mineral salinity complements the briny shellfish perfectly. The medium body and buttery notes also make it ideal for roasted chicken, creamy fish dishes, or aged goat's cheese. The bright acidity cuts through rich sauces while the textural weight holds up to more substantial preparations than lighter white wines could handle.
