Why do we love this wine?

The chardonnays of Chablis are among the greatest white wines in the world. They’re age-worthy, multi-dimensional, and supremely sophisticated (but that doesn’t mean you need to be sophisticated to drink them - trust us, we know from experience). The 2021 Domaine Vincent Wengier has, first and foremost, ripping acidity. It gather’s the wine perfectly and delivers a brilliant, enduring finish. Taste green apple, zesty lime, whole lemon, and a bit of briny maritime salinity on the back-palate. Some lees work gives it real breadth and presence on the palate. It will pair beautifully with creamy pasta, a hearty salad, fatty meats - but it’ll go best with oysters. A bit of salty sea-spray and tart lemon juice will set this wine on fire.

Unlike many New World Chardonnays that rely on oak and tropical fruit flavours, this Chablis showcases the pure expression of Chardonnay grown in Burgundy's northernmost appellation. The cool climate and unique Kimmeridgian soil create that distinctive mineral backbone and crisp acidity that Chablis is famous for. The maritime salinity you taste comes from ancient fossilised oyster shells in the vineyard soil, connecting this wine directly to its terroir.

This Chablis has excellent ageing potential thanks to its ripping acidity and textural complexity from lees work. While delicious now, it will develop beautifully over the next 5-8 years, gaining more honeyed notes and deeper mineral complexity. The high acidity acts as a natural preservative, allowing the wine to maintain freshness whilst developing tertiary flavours that make aged Chablis so prized by collectors.

The pairing of Chablis and oysters is legendary because both share the same geological origins - the Kimmeridgian soil of Chablis is rich in fossilised oyster shells from an ancient sea. This creates a natural flavour bridge between the wine's briny minerality and the oyster's oceanic salinity. The wine's bright acidity also cuts through the oyster's richness whilst the mineral notes complement rather than compete with the shellfish's delicate flavour.

Lees work refers to leaving the wine in contact with dead yeast cells after fermentation, which adds texture, complexity, and subtle bread-like flavours. In this Chablis, the lees contact creates that 'real breadth and presence on the palate' mentioned in the tasting notes. This technique gives the wine more body and a creamy mouthfeel whilst maintaining Chablis's characteristic freshness and minerality.

This 2021 Chablis is absolutely delicious right now, showing vibrant green apple and citrus flavours with that distinctive mineral finish. However, Chablis is known for its dual personality - excellent in youth for its freshness, and even better with a few years of cellaring. If you enjoy bright, zesty wines, drink it now; if you prefer more complex, honeyed flavours, cellar it for 3-5 years.
