Why do we love this wine?

This is one for the riesling purists. A steely, citrus-charged museum-release that allows us all to reap the rewards of someone else's patience. Handled gently from the start, with night harvesting and temperature-controlled fermentation, this one has been held back on purpose, biding its time, waiting to strike when the time is right. Well, let's just say that its timing is impeccable. In the glass, it’s a shimmering pale straw with green glints and perhaps just a hint of gold-like colour-development showing. Aromatically, it’s all lime, citrus and crisp green apple, layered with buttered toast, roasted nuts and a whiff steely wet slate. The palate is tight, focused and bursting with energy. That razor-sharp line of acidity drives through flavours of lime juice, citrus zest and crunchy apple, all finishing bone dry, mineral and long. Although this has seen time in the cellar, its oily texture and impressive mouthfeel are intertwined with youthful acidity. An unbelievable aged riesling.

Kongorong's cool climate and limestone-rich soils are perfectly suited to producing Riesling with intense minerality and natural acidity. The region's proximity to the coast provides the temperature variations needed for slow ripening, which preserves the variety's signature citrus intensity while building complexity. This terroir expression is evident in the wine's steely, wet slate characteristics and bone-dry finish that speaks directly to place.

The wine's developed complexity and mineral backbone make it exceptional with seafood, particularly oysters, crab, or grilled fish where the acidity cuts through richness. The honey and kerosene notes complement Asian cuisine beautifully, especially Thai or Vietnamese dishes with citrus and herb elements. For cheese, try aged goat's cheese or washed rind varieties that can match the wine's textural development and intensity.

This wine showcases Riesling in its most authentic form - bone dry, mineral-driven, and expressing pure varietal character without any winemaking tricks or residual sugar to mask its intensity.
