Why do we love this wine?

This is exactly what we love about Macedon Ranges chardy. Shining fruit purity, laser-like natural acidity, and a mineralic structure, all supporting outstanding citrus-driven intensity. It’s chardonnay that speaks with quiet confidence - then builds and builds to a finale of pink and yellow grapefruit ringing through the finish. Hand-picked in the early morning, whole-bunch pressed, wild fermented in French oak (28% new), and aged on lees with monthly stirring. 100% malolactic fermentation rounds out the edges and adds creamy depth to the lean, mineral bones. Unfiltered, with minimal sulphur - this is winemaking with a light, deft touch. It’s drinking beautifully now, but make no mistake, Mofo, this has a long, graceful road ahead. Expect a decade or more of slow-burn brilliance. Mineral, fine, and quietly powerful, this is Macedon chardonnay at its absolute best.

Macedon Ranges sits at a higher altitude and cooler climate than most Australian wine regions, creating ideal conditions for elegant Chardonnay with natural acidity and mineral complexity. The region's volcanic soils and cool nights preserve the grape's natural freshness while allowing for slow, even ripening. This results in wines like Curly Flat's 2022 that showcase citrus purity and mineral backbone rather than the richer, more tropical styles found in warmer regions.

This Chardonnay has excellent ageing potential of 10+ years due to its natural acidity and quality French oak integration. Over time, the bright citrus flavours will evolve into more complex honeyed and nutty notes, while the mineral backbone becomes more pronounced. The wine's texture will also develop greater richness and depth, though it's already drinking beautifully now for those who prefer its youthful vibrancy.

Wild fermentation uses naturally occurring yeasts from the vineyard and winery environment rather than commercial cultured yeasts. This traditional method creates more complex, layered flavours and adds textural interest to the wine. It's a slower, less predictable process that requires skill to manage, but results in wines with greater personality and a stronger sense of place - contributing to this Chardonnay's distinctive character and mineral complexity.

Unfiltered wines retain more of their natural texture, flavour compounds, and complexity since nothing is stripped away during processing. This contributes to the wine's full-bodied mouthfeel and rich character. You may notice some natural sediment in the bottle, which is completely normal and harmless. Simply decant carefully or let the bottle stand upright for a few hours before serving to allow any sediment to settle.

The wine's mineral backbone and citrus intensity make it excellent with seafood, particularly grilled fish, scallops, or lobster with butter-based sauces. The French oak and creamy lees contact also complement roasted chicken, pork tenderloin, or creamy pasta dishes. The natural acidity cuts through rich foods beautifully, while the full body can stand up to more substantial dishes than lighter white wines.
