Why do we love this wine?

Winemaker Pat Carmody modestly says of this wine, "I don't think there's any secret to my Chardonnay. They're relatively simply made wines. I pick 'em a bit riper than is fashionable. I don't let them go through malo, I don't lees stir much and they spend about 10 months in oak, around 20 per cent new". Well, just because it's simply made does not mean that this is a simple wine, complexity in spades. Famously elegant, there's notes of nectarine, ripe peach, cashew and various spices, just to name a few. Pure, clean and deeply concentrated. This is a phenomenal example of what can be done when you let the fruit and the terroir do the talking.

Pat Carmody deliberately picks the grapes riper than current fashion dictates, creating a more concentrated and full-bodied expression. Unlike many contemporary Chardonnays that undergo malolactic fermentation for buttery richness, this wine skips that process to maintain pure fruit character. The restrained lees stirring and moderate use of new oak (20%) allows the Sunbury terroir and natural fruit flavours to shine through without being masked by winemaking techniques.

Sunbury is one of Victoria's cooler climate regions, located northwest of Melbourne, which provides ideal conditions for elegant Chardonnay development. The region's volcanic soils and continental climate with warm days and cool nights allow for extended ripening periods, developing complex flavours while retaining natural acidity. This terroir contributes to the wine's characteristic elegance and the distinctive mineral backbone that supports the rich nectarine and peach flavours.

Given the wine's full-bodied structure, concentrated fruit, and 10 months of oak maturation, this Chardonnay has excellent cellaring potential of 5-8 years from vintage. The riper picking style and estate-grown fruit provide the backbone for graceful ageing, where the current nectarine and peach flavours will evolve into more complex honeyed and nutty characteristics. The wine's natural acidity and mineral structure will help it develop tertiary flavours while maintaining freshness.

The full-bodied, oaky character with creamy textures makes this ideal for rich seafood dishes like lobster thermidor or pan-seared scallops. The wine's concentration and spice notes complement roasted chicken with herbs, while the cashew and oak flavours pair beautifully with creamy pasta dishes or risotto. The ripe fruit character also works well with soft cheeses like brie or camembert, creating a harmonious balance between the wine's richness and the cheese's creaminess.

Estate grown indicates that Craiglee controls the entire winemaking process from vineyard to bottle, ensuring consistent quality and expressing their specific terroir. This allows winemaker Pat Carmody to make precise decisions about harvest timing, yields, and grape selection that directly influence the final wine character.
