Richly fruited, shapely, elegant Margaret River chardonnay with driving acidity and a hint of minerality? Sounds like a winner to me. We love this wine, easy to drink, easy to love - no fuss chardy!

Don't worry, try one of these

Why do we love this wine?

Hand picked fruit, whole bunch press to juice, and fermented with wild yeast. Extended ageing on lees in 30% new French oak. This is stylish wine to be sure. Round and shapely like it's regional compatriots, but with a certain slick French styling that shows off a bit of acidity and mineral complexity. That time in barrel provides a subtle backbone of cedar and structure, completing a lovely drink that exudes freshness but certainly won't fade away with a bit of cellar time.

Frequently Asked Questions

This wine showcases a sophisticated French-influenced approach that sets it apart from the richer, more tropical Australian Chardonnay stereotype. The combination of wild yeast fermentation and 30% new French oak creates a more restrained, mineral-driven profile with enhanced acidity. Margaret River's maritime climate naturally produces more elegant Chardonnays, and this winemaker has amplified that characteristic with European techniques to create something that bridges Old and New World styles.

Wild yeast fermentation adds layers of complexity that commercial yeasts simply can't achieve, contributing to the wine's textural sophistication and mineral character. Unlike cultured yeasts that produce predictable flavours, indigenous yeasts from the vineyard create unique flavour compounds that reflect the terroir. This process typically takes longer and requires more skill to manage, but results in wines with greater depth and a more authentic expression of place - exactly what you're experiencing in those brioche and citrus notes.

Despite being a 2024 release, this wine is built for medium-term cellaring thanks to its structural backbone from French oak and extended lees ageing. The combination of natural acidity, mineral complexity, and oak integration suggests it will develop beautifully over 5-8 years. As it ages, expect the citrus brightness to evolve into more honeyed notes while the oak becomes more integrated, and those textural elements will gain even more complexity.

Extended lees contact is where those dead yeast cells work their magic, creating the wine's creamy, textural mouthfeel and contributing to those brioche flavours you'll taste. This process, borrowed from Burgundian winemaking, adds richness without heaviness and helps integrate the oak more seamlessly. The lees also act as a natural antioxidant, protecting the wine's freshness while building complexity - it's why this Chardonnay feels both rich and vibrant simultaneously.

The wine's medium body and mineral backbone make it incredibly food-friendly, particularly with dishes that can match its textural complexity. Think roasted chicken with herbs, lobster thermidor, or creamy mushroom risotto where the wine's acidity cuts through richness while its oak complements earthy flavours. The citrus and white peach notes also make it excellent with pan-seared scallops or grilled fish with butter sauce, where the wine's freshness enhances rather than competes with delicate seafood.
