Why do we love this wine?

Here’s a little rundown of the Rolls Royce treatment given to this wine: the vines were rigorously hand-pruned to provide good sun exposure for ample ripeness. They were then hand-picked and whole bunch pressed, followed by a partial wild ferment before being gravity-fed to 40% new French oak barrels with regular lees-stirring for nine months. The wine was then bottled unfined and unfiltered, providing incredible texture, tension and intensity. It’s funky, flinty, nutty and citrusy. Such a compelling wine at an even more compelling price.

While it may result in some natural sediment over time, it ensures maximum flavour intensity and authentic expression of the vineyard's terroir.

Wild fermentation uses naturally occurring yeasts from the vineyard rather than commercial strains, creating more complex and unpredictable flavour compounds. The 'partial' approach means some juice was fermented with wild yeasts while the remainder used cultured yeasts, balancing complexity with consistency. This technique often produces the funky, savoury notes mentioned in the tasting profile, adding layers of interest that commercial yeasts alone cannot achieve.

Lees stirring involves regularly mixing the wine with dead yeast cells during barrel ageing, creating the creamy texture and adding subtle nutty, biscuity flavours. This process also acts as a natural antioxidant, allowing the wine to develop complexity without losing freshness. The extended nine-month period indicates serious commitment to texture development, resulting in the full-bodied palate weight while maintaining the wine's citrusy brightness.

The wine's full body and creamy texture make it perfect for rich seafood dishes like lobster thermidor or pan-seared scallops with butter sauce. The mineral backbone and citrus notes also complement roasted chicken with herbs or creamy mushroom risotto beautifully. The oak integration and complexity can stand up to stronger flavours like aged cheeses or even light pork dishes, making it remarkably versatile for fine dining occasions.
