Why do we love this wine?

This single site chardonnay from high in the Adelaide Hills has had “the works” treatment, with handpicking, natural yeast, barrel fermentation, a third new oak… and did we mention this was a very, very good vintage. Richer than you might expect, it has one foot in the ‘fine’ camp and the other one in ‘rich’. Spice from the oak runs through it, but the fruit drives it from start to finish. Oh, and that finish?! Gosh, it'll be hard not to drink the whole case in one weekend.

The combination of natural yeast fermentation and one-third new oak creates a wine that balances the region's natural acidity with textural complexity. Unlike many warmer climate Australian Chardonnays that can be overly rich, this wine maintains freshness while delivering satisfying weight and spice.

The 2021 vintage in Adelaide Hills was marked by ideal growing conditions that allowed for perfect ripeness development while retaining natural acidity. Cool nights and warm days during the growing season concentrated flavours while preserving the varietal character that makes this Chardonnay so compelling. The vintage's quality is reflected in the wine's ability to showcase both finesse and richness, creating a perfect balance that's rare to achieve.

Barrel fermentation, combined with one-third new oak, adds layers of complexity beyond simple oak flavouring. The process integrates toasty, spicy notes throughout the wine rather than just on the surface, creating the textural style noted in this wine. The natural yeast fermentation in barrels also contributes to the wine's distinctive character, building complexity through slower, more nuanced fermentation that enhances the apple and flinty mineral notes.
