One of our most consistent wines, vintage to vintage. This is our 4th or 5th time going around and it just gets better and better. Big, bold, concentrated and intense, this is a beautiful expression of Mornington Peninsula chardonnay.

Why do we love this wine?

A very impressive chardonnay, that gets the ‘full works’ from a winemaker who doesn’t shy away from stirring a bit of intensity into a wine. From toasty French oak to 100% malo (bringing buttery notes and extra texture) the complex flavours here have only occurred through maximum devotion, love and attention. Peach, melon, butterscotch... this is sumptuous chardonnay, with a full body that tucks in nicely with a racy acidity. We’ve managed to get the last few cases from the winery of this beautiful drop, so don’t dilly dally!

Frequently Asked Questions

This Chardonnay showcases the cooler climate elegance of the Mornington Peninsula, where maritime influences create ideal conditions for premium white wine production. The winemaker has employed traditional Burgundian techniques including 100% malolactic fermentation and French oak maturation, creating a wine with exceptional complexity and texture. Unlike many commercial Australian Chardonnays that focus on fruit purity, this wine embraces the full spectrum of winemaking artistry to deliver layers of flavour and a sophisticated mouthfeel.

The distinctive buttery notes come from 100% malolactic fermentation, a secondary fermentation process that converts sharp malic acid into softer lactic acid while producing diacetyl compounds that create those creamy, butterscotch flavours. Combined with French oak maturation and lees stirring, this creates the wine's sumptuous texture and full body. This traditional technique is often associated with premium Burgundian Chardonnay production and requires careful timing and expertise to achieve the perfect balance.

Serve this wine slightly chilled at 10-12°C to allow its complex flavours to fully express themselves without being muted by excessive cold. The rich, full-bodied style pairs beautifully with creamy seafood dishes, roasted chicken with herbs, or aged hard cheeses like gruyere. The wine's substantial texture and oak influence make it an excellent match for dishes with butter-based sauces or anything featuring mushrooms, as these complement the wine's earthy complexity.

A 95-point rating from Wine Orbit places this Chardonnay in the 'outstanding' category, indicating exceptional quality that represents the top tier of Australian wine production. Wine Orbit is known for their rigorous tasting methodology and focus on Australian and New Zealand wines, making their high scores particularly meaningful for local producers. This rating suggests the wine demonstrates remarkable complexity, balance, and aging potential that sets it apart from everyday drinking wines.

While this Chardonnay is drinking beautifully now, showcasing its rich fruit and oak integration, the 2021 vintage has excellent cellaring potential due to its full-bodied structure and quality winemaking. Premium Mornington Peninsula Chardonnays often develop additional complexity over 5-8 years, with the oak becoming more integrated and tertiary flavours like honey and nuts emerging. The wine's racy acidity provides the backbone needed for graceful aging, though many will find it irresistible in its current youthful exuberance.
