No doubt this would have had a chablis-like sensibility to it in its youth, but the layers have begun to unfurl and reveal something oh-so-much-more special.

Don't worry, try one of these

Why do we love this wine?

Ripe mango and yellow nectarines dance with a star anise spice and notes of vanilla infused panna cotta. There's a touch of cultured butter and freshly baked croissant to the aroma, which will keep you coming back for more. The texture is bold and unashamed, while still holding tightly onto that fresh Yarra Valley acidity. There's a sense that these wines are reluctantly released from the cellar, but the waiting game always pays off when you sink your teeth into it. This is a remarkable wine, and we've only managed to get a small amount to share with you.

Frequently Asked Questions

This Chardonnay showcases the Yarra Valley's unique cool-climate characteristics, where the region's natural acidity balances beautifully with rich, full-bodied texture. The combination of tropical fruit flavours with French oak influences creates a wine that's both powerful and elegant. Yarra Valley's cooler temperatures allow for longer ripening periods, developing complex flavours while maintaining that crucial acid backbone that prevents the wine from becoming overly heavy.

The vanilla and cultured butter characteristics come from a combination of malolactic fermentation and oak barrel ageing techniques. Malolactic fermentation converts sharp malic acid into softer lactic acid, creating that creamy, buttery mouthfeel. The vanilla notes develop from compounds like vanillin extracted from oak barrels during maturation. This winemaking approach is classic for premium Chardonnay, creating layers of complexity that complement the natural fruit flavours.

The wine's rich texture and creamy notes make it perfect for dishes with similar weight and complexity. Think roasted chicken with herbs, lobster thermidor, or creamy mushroom risotto. The star anise spice notes also complement Asian-inspired dishes like coconut curry or five-spice pork. The wine's acidity cuts through rich sauces while its full body matches substantial proteins and cream-based preparations.

Serve this Chardonnay slightly chilled at 10-12°C to best showcase its complex aromatics and balanced acidity. The wine is drinking beautifully now but can be cellared for 3-5 years, during which the tropical fruit flavours will integrate further with the oak influences. Store bottles on their side in a cool, dark place away from temperature fluctuations. Decanting isn't necessary, but allowing the wine to breathe for 15-20 minutes after opening will enhance its aromatic complexity.

A 4.0 Vivino rating represents the top 10% of wines on the platform, indicating exceptional quality that consistently impresses wine drinkers. This score reflects the wine's complex flavour profile, excellent balance, and the producer's skilled winemaking techniques. For Chardonnay specifically, achieving this rating means the wine successfully balances richness with freshness, avoiding common pitfalls like excessive oak or lack of acidity that plague lesser examples of the variety.
