It’s back: our Mofos' favourite rich, buttery chardonnay. You’ve gone crazy for this one, year after year after year, but this time it's different. Like a crazy scientist, we're going BACK IN TIME! This is the same wine you've always loved, but this time, we've done the ageing for you - we love a little throwback!

Don't worry, try one of these

Why do we love this wine?

The round melon, pineapple and guava notes abundantly coat the palate, while succulent french oak flavours linger long. Loaded with texture and harmonious layers of citrus and floral notes to really secure its place as one complex chardy. Time in bottle has acted to soften the edges of this wine, to smooth out any creases, stretch out any sore spots. We could go on for days, the point is, this wine is absolutely singing right now. You’ll have no problems knocking back a glass or two of this beauty whatever the occasion, we’ve certainly been known to crack one come 5pm at Mofo HQ.

Frequently Asked Questions

Adelaide Hills' elevated altitude and cool climate create perfect conditions for Chardonnay, allowing the grapes to retain natural acidity while developing complex flavours. The region's diurnal temperature variation - warm days and cool nights - helps preserve the delicate citrus and floral characteristics evident in this wine. This terroir, combined with the winemaker's French oak treatment, produces the textural complexity and mineral backbone that defines quality Adelaide Hills Chardonnay.

The five years of bottle age have transformed this Chardonnay from a youthful wine into a harmonious, mature expression. Time has integrated the French oak with the fruit, creating seamless layers where the melon and tropical notes now blend effortlessly with the oak-derived texture. The aging process has also developed tertiary flavours and softened any initial tannins, resulting in the smooth, complex wine that's described as 'singing' right now.

This medium-bodied, oak-influenced Chardonnay pairs beautifully with rich seafood dishes like lobster thermidor or pan-seared scallops, where the wine's texture matches the food's richness. The citrus and mineral notes make it excellent with roasted chicken or pork, while the French oak treatment allows it to stand up to creamy pasta dishes or aged cheeses. The wine's complexity also makes it perfect for solo sipping during evening relaxation.

James Halliday's 90-point rating places this Chardonnay in the 'outstanding' category, indicating exceptional quality and winemaking skill. The 'Five Star Producer' designation means the winery consistently produces wines of this calibre, not just occasional successes. This rating validates the wine's complex layering of fruit, oak, and mineral elements, confirming it represents excellent value and drinking pleasure for serious wine enthusiasts.

Serve this Chardonnay slightly chilled at 10-12°C to showcase its textural complexity without muting the tropical fruit flavours. Since it's already at peak drinking condition after five years of aging, it should be consumed within the next 2-3 years to enjoy its current harmony. Store bottles on their side in a cool, dark place, and decant briefly if desired to allow the integrated oak and fruit flavours to fully express themselves.
