Don't worry, try one of these

Why do we love this wine?

A little rich and a little creamy. A powerful citrus core framed by riper tropical nuance. This is the Margaret River chardy we've been hangin' out for. The wine is lead by a fleshy lemon and lemon drop confectionary citrus drive. There is genuine power and presence in that bright acid core. Some tropical notes of ripe melon and charred pineapple play on the edges, with desiccated coconut and vanilla offering further complexity. Fresh cream and star anise aromatics reveal themselves late in the piece once the wine has had a moment to open up a little. The finish persists longer than you think it will, exciting and surprising long after you've set the glass down. Drinking brilliantly now, but don't be afraid to set a few down for up to a decade - you'll be handsomely rewarded for your patience.

Frequently Asked Questions

This wine showcases Margaret River's unique ability to balance power with elegance in Chardonnay. The region's maritime climate allows for extended ripening, creating the wine's distinctive combination of intense citrus drive and tropical complexity. Unlike cooler climate Australian Chardonnays that lean heavily acidic, or warmer regions that can be overly rich, Margaret River produces this perfect marriage of bright lemon core with ripe melon and charred pineapple notes.

While drinking beautifully now, this wine has the structure and complexity to develop over up to a decade. The wine's powerful acid backbone and full-bodied nature provide the foundation for extended ageing, during which the tropical and vanilla notes will integrate further and develop tertiary characteristics. Premium Margaret River Chardonnays like this often reward patience by developing honeyed, nutty complexity while maintaining their citrus freshness.

The wine's rich, creamy texture and citrus-tropical flavour profile makes it ideal for seafood with cream-based sauces, roasted chicken, or pork dishes with fruit elements. The vanilla and coconut notes complement dishes with similar aromatics, while the bright acidity cuts through rich, buttery preparations. Consider pairing with lobster thermidor, pan-seared scallops with cauliflower puree, or even spiced Asian dishes where the tropical notes can bridge flavour profiles.

While the specific meaning isn't detailed, 'Gravity' in winemaking often refers to gravity-fed production methods that gently move grapes and juice without pumping, preserving delicate flavours and textures. This gentle handling technique is particularly important for premium Chardonnay as it maintains the wine's natural structure and prevents oxidation. The careful winemaking approach likely contributes to this wine's impressive balance of power and finesse, allowing the pure fruit expression to shine through.

Byron & Harold represents the new wave of boutique Australian producers focusing on quality over quantity, crafting wines that express their specific terroir rather than following commercial trends. The 'Mofo Fave' designation suggests this wine has impressed critics with its distinctive character and exceptional value proposition. Boutique producers often have the flexibility to experiment with techniques and vineyard sites that larger producers cannot, resulting in unique wines like this that capture both regional character and individual winemaker vision.
