Don't worry, try one of these

Why do we love this wine?

A little rich and a little creamy. A powerful citrus core framed by riper tropical nuance. This is the Margaret River chardy we've been hangin' out for. The wine is lead by a fleshy lemon and lemon drop confectionary citrus drive. There is genuine power and presence in that bright acid core. Some tropical notes of ripe melon and charred pineapple play on the edges, with desiccated coconut and vanilla offering further complexity. Fresh cream and star anise aromatics reveal themselves late in the piece once the wine has had a moment to open up a little. The finish persists longer than you think it will, exciting and surprising long after you've set the glass down. Drinking brilliantly now, but don't be afraid to set a few down for up to a decade - you'll be handsomely rewarded for your patience.

Frequently Asked Questions

This Gravity Black Chardonnay represents a more powerful, concentrated expression than many Margaret River Chardonnays. While the region is known for elegant, mineral-driven whites, this wine showcases a fuller-bodied approach with intense citrus concentration and tropical complexity. The combination of bright acidity with rich, creamy textures creates a distinctive profile that balances Margaret River's natural elegance with bold, contemporary winemaking techniques.

Serve this Chardonnay slightly chilled at 10-12°C to allow its complex aromatics to develop properly. The wine benefits from decanting or at least 15-20 minutes in the glass, as the description notes that fresh cream and star anise aromatics emerge once it opens up. Pair it with rich seafood dishes, roasted chicken, or creamy pasta - the wine's full body and persistent finish can handle substantial flavours without being overwhelmed.

While the specific meaning isn't detailed in the attributes, 'Gravity Black' likely refers to Byron & Harold's premium tier or a specific winemaking technique involving gravity-fed processing. Many premium wineries use gravity-flow systems to handle grapes more gently, reducing mechanical pumping that can damage delicate fruit. This gentle handling often results in wines with greater complexity and refined textures, which aligns with this Chardonnay's sophisticated profile and full-bodied character.

This Chardonnay is drinking brilliantly now, showcasing immediate appeal with its vibrant citrus core and tropical complexity. However, it has excellent cellaring potential for up to a decade, during which time the wine will develop more integrated oak, deeper honeyed notes, and increased textural complexity. The wine's natural acidity and full-bodied structure provide the backbone necessary for graceful ageing, making it suitable for both immediate enjoyment and long-term cellaring.

The wine's rich, creamy texture and powerful citrus core make it ideal for dishes with similar weight and complexity. Try it with lobster thermidor, pan-seared scallops with vanilla butter, or roasted pork belly with apple. The tropical notes and vanilla characteristics also complement Asian fusion cuisine, particularly dishes with coconut-based sauces or char-grilled elements. The wine's persistent finish means it won't be overwhelmed by bold flavours or rich, creamy preparations.
