Why do we love this wine?

This one's been treated to the full winemaker’s toolkit: cool morning pick, whole-bunch pressed, fermented in new and seasoned oak, partial malo and plenty of bâtonnage for that creamy, layered mouthfeel. So what do we end up with? Ripe peaches and nectarines jump out first, then a soft layers of cashew and brioche. On the palate, it’s stone fruit all the way, golden peach and lemon curd all supported by toasty oak and a zesty citrus line that keeps things fresh and focused. It’s concentrated, polished, and totally moreish. A wine that brings the opulence but never loses its balance. Margs chardonnay fans will be huge on this one. This is seriously special...

The extensive bâtonnage (lees stirring) adds creamy complexity while maintaining the wine's natural acidity, resulting in a style that's both opulent and elegant.

Ferguson Valley's cool maritime climate and elevated vineyards create ideal conditions for premium Chardonnay, allowing grapes to ripen slowly while retaining natural acidity. The region's diurnal temperature variation helps preserve delicate aromatics while developing complex stone fruit flavours. This terroir produces Chardonnays with distinctive mineral undertones and the ability to handle oak integration beautifully, making it one of Western Australia's most promising cool-climate regions.

The wine's creamy texture and toasty oak make it perfect for rich seafood dishes like lobster thermidor or pan-seared scallops with cauliflower purée. The stone fruit flavours and citrus backbone also complement roasted chicken with herbs, creamy pasta dishes, and aged hard cheeses. The wine's concentration and oak integration can handle dishes with butter-based sauces and even lighter pork preparations without being overwhelmed.

The cool morning harvest preserves delicate aromatics, while whole-bunch pressing extracts pure juice without harsh tannins. Fermentation in both new and seasoned oak barrels adds complexity without overwhelming the fruit, creating layers of vanilla and spice. The partial malolactic fermentation softens acidity while adding buttery notes, and extended bâtonnage develops the signature creamy mouthfeel that makes this Chardonnay so distinctive and food-friendly.
