Don't worry, try one of these

Why do we love this wine?

High altitude fruit from Summertown, whole bunch pressed, barrel fermented, and then aged for over four years on lees before disgorgement. This is méthode traditionnelle done with the same rigour and patience you'd expect from a top Champagne house. Ripe stone fruit, fine persistent bubbles, a creamy texture built from all that lees contact, and a finish that goes on and on. At 12.9% alcohol it's restrained and poised - the kind of sparkling wine that holds its own at any table, alongside anything from grilled crayfish to a serious cheese situation. Cellaring potential of 25 years. Though opening one right now is also a completely defensible decision.

Halliday Wine Companion

A pitch-perfect Blanc de Blancs. This stellar release offers up richness, savoury detail of brioche and nougat and bristles with mineral charges of brine and chalk. It goes taut with citrus and crunchy green apple characters. Layers on layers of flavour and yet a levity and vitality in tow. A marriage of all the right elements here.

Frequently Asked Questions

The extended four-year lees ageing and méthode traditionnelle production create a wine with exceptional structural integrity and complexity that will continue evolving. The high-altitude Adelaide Hills fruit provides natural acidity that acts as a preservative, while the barrel fermentation adds textural components that integrate and develop over decades. Like premium Champagne, the autolytic flavours from lees contact will become more pronounced and sophisticated with time, transforming the current stone fruit character into deeper, more nuanced tertiary flavours.

The restrained alcohol level is a hallmark of cool-climate, high-altitude viticulture that prioritises elegance over power. This lower alcohol allows the wine's natural acidity and mineral backbone to shine through without being masked by heat or weight. It also means the bubbles feel more refined and persistent, creating that coveted 'fine mousse' texture that's essential in premium sparkling wine. The moderate alcohol makes it incredibly food-friendly and suitable for extended drinking occasions.

Whole bunch pressing is a gentle extraction method that minimises skin contact, preserving the wine's pristine colour and delicate flavour profile essential for blanc de blancs style. This technique reduces the extraction of harsh tannins and phenolics that could compromise the wine's elegance and finesse. Combined with the high-altitude Summertown fruit, this careful handling ensures the wine maintains its bright acidity and pure expression of terroir. It's the same approach used by top Champagne houses to achieve maximum quality from white grape varieties.

The wine's creamy texture from lees ageing and mineral backbone make it exceptional with rich seafood like the mentioned grilled crayfish, where the bubbles cut through richness while the complexity matches the dish's intensity. The brioche and spice notes complement aged cheeses beautifully, particularly hard cheeses where the wine's acidity provides contrast. Its medium body and sophisticated structure also make it suitable for white meat dishes with cream-based sauces, where many lighter sparkling wines would be overwhelmed.

The four-year lees ageing and méthode traditionnelle production mirror the exacting standards of premium Champagne houses, while the 96-point ratings from multiple critics confirm world-class quality. The Adelaide Hills' cool climate and high altitude create similar conditions to Champagne's terroir, producing wines with comparable elegance and ageing potential. However, the Australian expression brings its own character through the unique Summertown vineyard site, offering stone fruit intensity that's distinctly regional while maintaining the structural sophistication expected from top-tier traditional method sparkling wine.
