Why do we love this wine?

A classic blend of 80% chardonnay and 20% pinot noir, plucked straight off the premium estate vineyards and fermented separately in cool conditions to allow for delicate flavours to slowly develop. The juice also sees a little bit of French oak to add some weight and complexity to the blend. We end up with a full but balanced sparkling with a creamy finish and pleasantly fine-beaded sparkle. This wine does what you'd expect a Yarra Valley NV sparkling to do, but does it better.

Frequently Asked Questions

This sparkling showcases the Yarra Valley's cool climate advantage, where the extended growing season allows chardonnay and pinot noir to develop complex flavors while retaining natural acidity. The separate fermentation of each variety before blending, combined with French oak treatment, creates a more sophisticated profile than typical Australian sparklings. The result is a wine that balances the region's characteristic elegance with added weight and complexity.

This blend ratio mirrors the traditional Champagne approach, where chardonnay provides the wine's backbone of crisp acidity and citrus notes, while pinot noir adds body, structure, and subtle red fruit complexity. The higher chardonnay percentage creates a more delicate, refined style compared to equal blends, making it perfect for those who prefer elegance over power. This composition also allows the wine to age gracefully, developing more complex brioche and creamy textures over time.

NV stands for 'Non-Vintage,' meaning this sparkling is blended from multiple harvest years to achieve a consistent house style. This approach allows the winemaker to balance varying seasonal conditions, using older reserve wines to add complexity and younger wines for freshness. The result is a more reliable, approachable wine that represents the producer's signature style rather than the characteristics of a single vintage year.

Serve this sparkling well-chilled at 6-8°C in flute or tulip glasses to preserve the fine bubbles and concentrate the brioche and green apple aromas. The medium body and creamy finish make it versatile for both aperitif service and food pairing with seafood, soft cheeses, or light poultry dishes. The French oak influence means it can handle slightly richer foods than lighter sparklings, making it excellent with oysters or creamy pasta dishes.

The 5 Star Halliday rating indicates this winery consistently produces wines of outstanding quality, as James Halliday's rating system is one of Australia's most respected wine assessments. 'Estate Grown' means the grapes are grown on the winery's own vineyards, ensuring complete control over viticulture practices from vine to bottle. This combination suggests exceptional attention to detail and quality control throughout the entire winemaking process, resulting in a more authentic expression of the Yarra Valley terroir.
