Why do we love this wine?
This wine is created with the 'hands off' ethos in mind (more popularly called 'minimal intervention'). That doesn't mean that there's no care taken in the production of this wine, in fact it's just the opposite. In this case, it really just means that the highly-sought-after fruit has been given the appropriate time to develop and find its full voice. Other than that, this is a very standard, albeit completely delicious, traditional method sparkling with poise, balance and a genuine kick that'll get you up and dancing!
