Why do we love this wine?

We know we've said it before but, it's important to note: Sidewood Estate have, what is considered by some to be, the most state-of-the-art sparkling winemaking facilities in the country, if not the world. Along with a reputation for astonishing wines, they also have a history of criminally under-pricing their own products. With a traditional blend of 65% chardonnay and 35% pinot noir, this wine has wonderfully toasty brioche aromas enhanced by zesty citrus and bright green apple. A harmonious palate of citrus blossom, biscuits and further green apple, is complemented by a clean, mineralic acidity and a loooooooong, elegant creamy finish. Where do we sign up?

Frequently Asked Questions

This Chloe Cuvée comes from Sidewood's world-class sparkling facilities in Adelaide Hills, using the traditional Champagne blend of 65% Chardonnay and 35% Pinot Noir. The cool climate conditions of Adelaide Hills create ideal growing conditions for these classic sparkling varieties, allowing for the development of complex brioche and toast characters through extended lees ageing. The 95-point rating from Australian Wine Showcase Magazine confirms this is exceptional quality at what Sidewood is known for - criminally under-pricing their premium wines.

The 2017 vintage was particularly favourable in Adelaide Hills, allowing for optimal ripening of both Chardonnay and Pinot Noir grapes. This vintage has now had sufficient time to develop the complex toasty brioche aromas and creamy texture that define quality traditional method sparkling wines. The extended bottle ageing since 2017 has integrated the citrus and green apple freshness with the rich biscuity characters, creating the harmonious balance and long elegant finish this wine displays.

The rich, complex style with brioche and almond notes makes this perfect for substantial food pairings beyond typical aperitif service. The mineralic acidity and citrus blossom characters complement fresh oysters, seared scallops, or creamy seafood dishes beautifully. The toasty, biscuity elements also pair wonderfully with aged cheeses, charcuterie, or even roasted chicken with herbs, making it versatile enough for both elegant canapés and full dinner service.

Adelaide Hills' cool climate and elevated vineyards create perfect conditions for retaining the natural acidity essential in quality sparkling wines. The region's diurnal temperature variation allows grapes to ripen slowly while maintaining crisp acidity and delicate fruit flavours. This terroir contributes to the wine's clean, mineralic backbone and bright citrus characteristics, while the cool conditions help preserve the elegant green apple notes that balance the rich brioche complexity developed during traditional method production.

This classic Champagne-style blend leverages each variety's strengths - Chardonnay provides the wine's citrus blossom brightness, green apple freshness, and mineralic backbone, while Pinot Noir contributes body, complexity, and the ability to develop those sought-after brioche and biscuit characters. The 65/35 ratio ensures the wine maintains elegance and finesse while developing sufficient richness and creamy texture through traditional method production, creating the harmonious balance between freshness and complexity that defines premium sparkling wine.
