Why do we love this wine?

Sidewood Estate have, what is considered by some to be, the most state-of-the-art sparkling winemaking facilities in the world. Along with a reputation for astonishing wines, they also have a history of criminally under-pricing their own products. This is a perfect example. Pristine fruit, treated in the traditional method and left 5 years on lees, the Isabella Late Disgorged is one for the sparkling purists. Speaking honestly here, if you chucked an old French guy's name on the label, even the most devout Champagne-heads would struggle to tell the difference. One of the best sparkling wines in the country and absolutely tremendous value.

After 5 years on lees, it develops extraordinary complexity with layers of brioche, cherry, and strawberry flavours that rival the finest French Champagnes. The extended lees contact creates that coveted creamy texture and sophisticated autolytic character that serious sparkling wine enthusiasts seek.

Late disgorgement means the wine remained on its lees for an extended period - in this case 5 years - before the sediment was removed. This prolonged contact with dead yeast cells develops incredible depth, creating those signature brioche and biscuity notes while adding textural richness. It's the same technique used by prestige Champagne houses to create their most premium cuvées, resulting in a wine with exceptional complexity and longevity.

The Adelaide Hills' cool climate and elevated vineyards provide ideal conditions for premium sparkling wine production, allowing grapes to retain crucial acidity while developing complex flavours slowly. The region's diurnal temperature variation preserves the delicate cherry and strawberry characters essential for quality rosé, while the cooler temperatures ensure the wine maintains the crisp backbone necessary for traditional method sparkling wines.

The wine's rich, complex profile with brioche notes makes it perfect for substantial canapés, charcuterie, and soft cheeses like brie or camembert. The cherry and strawberry fruit characters beautifully complement salmon, duck breast, or even lightly spiced Asian cuisine. While absolutely stunning now after its 5-year lees ageing, this wine has the structure and complexity to develop further over the next 3-5 years.
