Don't worry, try one of these

Why do we love this wine?

Only the very best parcels of fruit make the final cut. Hand-picked, barrel-aged, bottle-fermented and matured (on lees) for five years before release - this is luxury in a flute. Complex, refined, and utterly Tasmanian. White peach, redcurrant and citrus set the tone, before richer notes of baked brioche, oyster shell, grilled cashew and apple pie take over. There’s shortbread and cream on the palate, a vivid mineral acidity threading through it all, and a finish so long and graceful you’ll want to chase it with another glass. Honestly, we're not doing it justice - this wine is genuinely a contender for best sparkling in Australia.

Halliday Wine Companion

Halliday Wine Companion

A blend of 56% pinot noir and 44% chardonnay from Pipers River with five years on lees. Pale straw with a fine, energetic bead and aromas of white peach, crisp green apple, redcurrant and citrus fruits. Hints of freshly baked brioche, apple pie, soft spice, oyster shell, pressed wildflowers and grilled cashews. Some nice shortbread tones on the palate with clotted cream hints, a lacy and vivid line of minerally acidity and a real sense of grace and complexity as it slowly sails away.

Frequently Asked Questions

Late disgorgement means this wine spent five years maturing on its lees (dead yeast cells) before the sediment was removed, compared to the typical 12-18 months for most sparkling wines. This extended lees contact creates those complex brioche, baked bread and creamy textures you taste, while developing greater depth and richness. It's a premium technique that requires patience but delivers exceptional complexity - hence why this wine is considered a contender for Australia's best sparkling.

Tasmania's cool climate and long growing season create ideal conditions for sparkling wine production, similar to Champagne's climate. The island's pristine environment and mineral-rich soils contribute to that distinctive 'vivid mineral acidity' threading through this wine. Cool temperatures help retain natural acidity while allowing flavours to develop slowly, creating the perfect balance between freshness and complexity that makes Tasmanian sparkling wines increasingly recognised on the world stage.

Serve chilled at 6-8°C in proper flutes to preserve the fine bubbles and concentrate the complex aromatics. Store bottles horizontally in a cool, dark place away from vibration - the wine's already at peak maturity but can hold beautifully for several more years. Given its 96-point rating and award-winning status, this is perfect for special celebrations or pairing with oysters, soft cheeses, or even rich dishes like roasted chicken where its complexity can shine.

The wine's rich, complex profile with brioche and mineral notes makes it incredibly food-friendly beyond typical sparkling wine pairings. While excellent with seafood and soft cheeses, its medium body and creamy texture can handle richer dishes like roasted poultry, mushroom risotto, or even Asian cuisine with subtle spice. The long, graceful finish and mineral backbone provide enough structure to complement both delicate canapés and more substantial fare.

While the specific blend isn't detailed, premium Tasmanian sparkling wines typically use the classic Champagne varieties - Chardonnay and Pinot Noir - which thrive in the island's cool climate. The white peach and citrus notes suggest Chardonnay influence, while the redcurrant hints point to Pinot Noir. Tasmania's unique terroir allows these varieties to develop intense flavours while maintaining the crisp acidity essential for world-class sparkling wine, explaining why this cuvée has earned such prestigious recognition.
