Why do we love this wine?

We genuinely never get sick of these wines. We know, it’s hard not to get excited about Champagne- but this one is extra special. Year on year, no matter the weather, we’re drinking Nicolas Maillart. The family have been growing vines in Montagne de Reims for nearly 300 years, now into their 9th generation with Nicolas at the helm. The grower Champagne revolution has meant families like the Maillarts could hone their centuries of experience, producing outstanding terroir driven styles. The family philosophy of biodiversity and minimal input vineyard practices continues today- seriously, you can’t be in the game this long without a sustainable outlook on viticulture. 

You can expect a good drive of that brioche, biscuity character, along with crisp apple, blossom, and honeyed characters. You can just tell that there has been so much love and care that has gone into this glass.If you want to be a hero at your next dinner party, get your hands on this one mofo.

Fulsome colour and temperamentally big-boned , this is an impressive example. The six grams of residual sugar finely knit into a texture of ripe, red-berried fruit. The finish has an ethereal poise, brought down to earth by just a hint of spice.

Unlike mass-produced Champagnes, grower producers like Nicolas Maillart control every step from vineyard to bottle, creating terroir-driven wines that express their specific location. Their biodiversity-focused, minimal intervention approach results in more authentic, characterful Champagnes that showcase centuries of accumulated knowledge and sustainable practices.

Magnums age more gracefully than standard bottles due to their lower oxygen-to-wine ratio, which slows oxidation and preserves freshness longer. The larger format also creates more stable temperature conditions during storage and allows for slower, more refined bubble development. For special occasions, magnums provide impressive presentation while delivering superior quality - the wine often tastes more integrated and elegant than its 750ml counterpart.

The brioche and biscuity characters from extended lees ageing make this perfect with rich seafood like lobster thermidor or pan-seared scallops. The crisp apple and citrus notes complement oysters beautifully, while the honeyed complexity pairs wonderfully with aged cheeses or roasted poultry. The hazelnut undertones also make it excellent with dishes featuring nuts or mushrooms, and its finesse handles delicate preparations without overwhelming subtle flavours.

Premier Cru indicates the grapes come from villages rated 90-99% in Champagne's quality hierarchy, with only Grand Cru villages scoring 100% ranking higher. This classification reflects superior terroir, optimal vineyard sites, and historically proven quality from the Montagne de Reims region. Premier Cru Champagnes offer excellent value, delivering complexity and elegance that rivals Grand Cru at more accessible prices, making this an exceptional choice for serious Champagne lovers.

Store magnums on their side in a cool, dark place at 10-12°C to maintain optimal condition. Serve chilled at 6-8°C in proper Champagne flutes to preserve the fine mousse and concentrate aromatics. The larger format means it takes longer to chill, so plan 3-4 hours in the refrigerator or 20-30 minutes in an ice bucket. Once opened, magnums stay fresh longer than standard bottles due to the lower surface area exposed to air.
