Why do we love this wine?

They’ve spent the last fifteen years working on finessing La Cuvee, making sure it was ready to lead their brand into the future. This has been created by going beyond the known, and liaising with brand new growers (including some Premier Cru vineyards) to create the blend. The increase in chardonnay (double the average for a house style) and lees time (average four years!) makes for a bright, generous and complex style with great finesse and freshness. It was a winner at the Tasting Bench, too. “Briochy and textured, but zippy and fresh. Kinda apple strudel-y, with lovely clean acidity. You can definitely smell the four years on lees. It’s got beautiful flavour and mouthfeel, and I know that texture’s from the extra time in bottle as the grapes were whole bunch pressed. This gave the wine its finesse and its name, because the cuvee is first press - so it has minimal skin contact, which means very little in the way of phenolics (white wine talk for tannins, really).

(This replaces the old Brut LP, and will be released in Australia early July. It had 4 years on lees instead of 3, has more chardonnay - 55% - and lower dosage. No taille, only cuvée, hence the name) A superb wine, outstanding for such a large maker and for the 'workhorse' wine of such a big house. Very creamy. Hints of peach and toast. A lovely soft, rich, full-flavoured but also refined wine.

This La Cuvée features double the usual amount of Chardonnay compared to traditional house blends, creating a brighter and more complex profile. The extended four-year lees ageing (well above the standard) develops exceptional texture and brioche-like complexity. Laurent-Perrier has also partnered with new Premier Cru growers specifically for this cuvée, moving beyond their established vineyard sources to craft something truly distinctive.

The creamy mouthfeel comes from the extended four years on lees, where dead yeast cells break down and release proteins that create that luxurious texture. The whole bunch pressing technique used here extracts only the purest juice with minimal phenolic compounds, resulting in finesse rather than harshness. This combination of long lees contact and gentle extraction creates the perfect balance of creaminess and zippy freshness.

The apple strudel-like flavours and clean acidity make this perfect for both aperitif drinking and food pairing. The creamy texture and citrus notes complement seafood beautifully, particularly oysters, scallops, or sashimi. The brioche character from lees ageing also pairs wonderfully with soft cheeses, while the crisp finish cuts through rich dishes like lobster thermidor or chicken in cream sauce.

First press juice, or 'cuvée' in Champagne terminology, represents the highest quality extraction from the grapes - typically the first 2,050 litres from 4,000kg of grapes. This juice has the purest flavours, lowest tannin levels, and highest acidity, which is why it commands premium pricing. The minimal skin contact during whole bunch pressing preserves the wine's elegance and prevents any bitter phenolic extraction that could compromise the delicate Champagne style.

Having already spent four years on lees before release, this Champagne is perfectly ready to enjoy immediately, showcasing its intended bright and generous character. However, quality Champagne like this can continue developing for 5-10 years, gradually gaining more complex honeyed and nutty notes while maintaining its essential freshness. The high Chardonnay content and Premier Cru fruit quality suggest excellent cellaring potential for those who prefer more developed flavours.
