Why do we love this wine?
The wine speaks for itself, sitting atop the ranks of Australian, even the world’s sparkling wines. It’s about 2/3 chardonnay and 1/3 pinot noir and has undergone a massive seven years tirage. Quite dry with an imperceptible 3.1 g/L dosage, it’s elegantly crisp whilst still maintaining body, depth and layered complexity. You’ll find floral notes, lemon essence, lychee, oyster shell, sourdough, mushrooms, almond and more if you take the time to explore the nose and palate of the wine. This is the equivalent of great vintage Champagne, only produced closer to home by an Australian icon.
