Crisp, light, and just a little bit cheeky- this bountiful brut brings bright bubbles, brisk citrus, and just a touch of warm brioche. Classically French, endlessly elegant, and poised to raise any glass to greatness.

Why do we love this wine?

Rolling hillsides, limestone-rich soils, and a storied lineage dating back to 1760.. This chardonnay dominant Champagne balances vibrant orchard fruit with a delicate thread of toasty richness. The lively core of green apple and citrus, ripe pear, and lemon zest gives way to notes of toasted hazelnut, almond, and warm brioche over a creamy mousse, underpinned by a fine threaded, mineral driven finish. Elegance without austerity. Pure craftsmanship without the pageantry.

Huon Hooke

Huon Hooke

Mid brassy yellow colour with a nutty/nougat bouquet, pinoty and rich throughout, the palate full and round, very dry and quite firm at the close, with almost a touch of austerity, which makes for a very appetising and food friendly wine. It's outstanding value for money.

Frequently Asked Questions

This is authentic Champagne from the prestigious Champagne region of France, crafted using the traditional méthode champenoise with secondary fermentation in bottle. The limestone-rich soils and chardonnay-dominant blend create a distinctly mineral-driven character that sets it apart from other sparkling wines made elsewhere. The extended lees ageing develops those signature brioche and toasted hazelnut notes that are hallmarks of quality Champagne.

NV stands for Non-Vintage, meaning this Champagne is a carefully crafted blend of wines from multiple years to achieve consistent house style. Master blenders use this technique to maintain quality and flavour profile regardless of individual vintage variations. The Comte de Lamotte's 260-year heritage since 1760 means they've perfected this blending art, often resulting in more complex and balanced Champagnes than single vintage releases.

The chardonnay dominance and brioche notes make this excellent with creamy dishes like lobster thermidor or chicken in cream sauce. The bright acidity and citrus elements cut through rich foods beautifully, while the toasted hazelnut and almond characteristics complement seafood, particularly oysters or seared scallops. It's also sophisticated enough to enjoy on its own as an aperitif, where the mineral finish really shines.

Serve well-chilled at 6-8°C in flutes or tulip glasses to preserve the delicate mousse and concentrate the aromatics. Store bottles horizontally in a cool, dark place away from vibration - the basement or wine fridge is ideal. Once opened, use a proper Champagne stopper and consume within 2-3 days, though the quality bubbles should maintain their liveliness for the first day.

You'll experience a beautiful progression from bright green apple and citrus on the nose to ripe pear and lemon zest on the palate. The medium body delivers creamy texture from the fine mousse, while the toasted elements - brioche, hazelnut, and almond - add complexity without overwhelming the fresh fruit core. The mineral-driven finish reflects the limestone terroir and provides elegant length that invites another sip.
