Why do we love this wine?

It’s with extreme excitement that we introduce you to the wines of Bortolomiol. The winery is run by Ottavia Bortolomiol alongside her daughters Maria Elena, Elvira, Luisa and Giuliana. It’s absolutely a family affair with a focus on creating world class sparkling wines in a sustainable manner. What they are doing is so impressive, they were recently included in a Prosecco masterclass at Vue de Monde hosted by none other than Tyson Stelzer, Australia’s top sparkling wine critic. So forget what you know about Prosecco and get on board with the new wave of exceptionalism.
Miòl is an extra dry cuvée made from glera (the traditional Prosecco grape) blended with chardonnay and verdiso. Yields are quite small for Prosecco, leading to great concentration and precision in the wine. The bead is quite fine, the aromatics vivid and citrusy, and the palate even has a savoury touch to go along with stunning minerality and a cleansing finish.

Unlike mass-produced Prosecco, it blends traditional glera with chardonnay and verdiso grapes, resulting in fine bubbles, vivid aromatics, and distinctive savoury minerality. The winery's sustainable practices and recognition by Australia's leading sparkling wine critic Tyson Stelzer further distinguish it from commercial offerings.

The addition of chardonnay brings structure, elegance and enhanced aging potential to the traditional glera base, while verdiso contributes aromatic complexity and acidity. This blend reflects the innovative approach of premium Prosecco producers who are moving beyond single-varietal wines to create more sophisticated expressions. The combination results in greater depth and a savoury mineral character that sets it apart from standard glera-only Proseccos.

In Prosecco classification, 'extra dry' actually contains more residual sugar than 'brut', typically 12-17 grams per litre, making it slightly off-dry rather than bone dry. This sweetness level perfectly balances the wine's natural acidity and enhances the citrus and green apple flavours. The style is particularly food-friendly and appeals to those who find brut Prosecco too austere, offering a rounder, more approachable palate.

Serve well-chilled at 6-8°C in flute or tulip glasses to preserve the fine bead and concentrate the citrusy aromatics. The wine's savoury minerality and light body make it excellent with antipasti, seafood, or creamy pasta dishes, while the citrus notes complement Asian cuisine beautifully. Its cleansing finish also makes it perfect as an aperitif or with light desserts featuring stone fruits.

Prosecco DOC Treviso indicates the grapes were grown specifically in the Treviso province, one of the most prestigious areas within the broader Prosecco DOC zone. This designation ensures strict quality controls and traditional winemaking methods, with Treviso's particular terroir contributing to the wine's distinctive mineral character.
