Why do we love this wine?

Spectacular vintage fizz from Tasmania’s south. There’s so much energy and excitement in the bottle. The acid - while lifted and fresh - has fallen back into the wine a little, gathering and cradling the fruit rather than leading it out, speaking to the maturity of the wine. Fresh green apples, lemon zest, lime juice, and stone fruits combine for a complex and intriguing fruit profile. More nuance unveils itself as it’s allowed to open up.
