Bernard Lonclas says “making champagne is more than just a trade, it’s a vocation - a calling, even”. We’re glad he’s decided making champagne is his calling, we didn’t know what we were missing until we got this in our glass.

Why do we love this wine?

This is very much a grower champagne- as rumour would have it Bernard is out hand picking the grapes at the winery just south of Reims during vintage. As Jancis Robinson said, this is not for ‘neophytes’ (for those of you who have to look that word up, so did we). Which just goes to say, this will really excite the nerds and connoisseurs at the party. It’s hard not to appreciate the beauty in the subtle nuances, the florality, the lively body, the creamy texture, and the refreshing finish. With just 10g/L dosage, this will find its groove with the starting nibbles at your next celebration.

Frequently Asked Questions

Bernard Lonclas is a grower-producer who hand-picks his own grapes at his estate just south of Reims, rather than buying fruit from other vineyards like larger champagne houses. This means complete control over quality from vine to bottle, resulting in a more personal expression of terroir. Grower champagnes often showcase unique characteristics and represent exceptional value compared to big-name brands, as you're getting the winemaker's individual vision rather than a mass-produced style.

This champagne displays subtle complexity and nuanced flavours that require a more developed palate to fully appreciate, as noted by wine critic Jancis Robinson. Rather than obvious fruit flavours, it showcases minerality, oyster shell notes, and delicate florality that might be lost on casual drinkers. The low 10g/L dosage means minimal added sugar, allowing the wine's natural character to shine through - something that appeals more to experienced wine enthusiasts who can appreciate its refined, bone-dry style.

The 10g/L dosage places this champagne in the 'brut' category, indicating a very dry style with minimal added sugar after disgorgement. This low dosage allows the wine's natural acidity and mineral character to dominate, creating a crisp, refreshing profile that pairs beautifully with seafood and light appetisers. Many premium champagnes use lower dosages to showcase the purity of their fruit and terroir, rather than masking it with sweetness.

Blanc de Blancs champagne is made exclusively from Chardonnay grapes, which naturally express citrus characteristics that become more pronounced through the traditional method's secondary fermentation. The oyster shell and mineral notes develop from the chalky soils of Champagne's terroir, particularly around Reims, where limestone-rich earth imparts these distinctive saline qualities. The extended lees contact during bottle ageing further enhances these mineral complexities, creating the sophisticated flavour profile that defines quality Blanc de Blancs.

The crisp, mineral-driven profile with citrus and oyster shell notes makes this champagne exceptional with raw seafood, particularly oysters, sashimi, or crudo. The light body and fine bubbles complement delicate canapés, goat's cheese, or smoked salmon without overwhelming subtle flavours. The low dosage and high acidity also make it an excellent aperitif that cleanses the palate, while the creamy texture from lees ageing allows it to pair beautifully with soft cheeses or even light poultry dishes.
