Why do we love this wine?

Natalie Fryar is probably the key reason that Jansz is so famous, and has been busy putting Kreglinger (including Ninth Island) bubbles on the map since 2016. Since Jansz though, and while bolstering the Kreglinger offerings, she’s been busy beavering away at a few projects - the closest of which to her heart is undoubtedly Bellebonne. Nat’s poured all her vineyard connections and sparkling knowhow into a label all of her own. Knowing her very high standards, we’ve been excited about this for, oooooh, about four years since we first heard it was a twinkle in her eye. Tyson Stelzer has already named Bellebonne as a six out of seven star bubbly maker, second only to Arras and Seppelt in the Aussie sparkling world. Now the proof is putting it in our glasses, and we’re no less up and about than four years ago. According to Nat, this wine is called ‘Bis’ (French for ‘the space in-between’) as the name encapsulates the process and inspiration it took to make this exquisite non-vintage rosé. You can expect aromas of strawberry, Turkish Delight and rose petal, followed by a palate that is elegant with textures of fresh cream, brioche and delicate fruit.

Tasmania's cool maritime climate provides ideal conditions for premium sparkling wine production, offering the high natural acidity and delicate fruit flavours essential for quality bubbles. The island's consistent temperatures allow for extended ripening periods, developing complex aromatics like the strawberry and rose petal notes found in this wine while maintaining the crisp minerality. This climate produces grapes with the perfect balance of sugar and acid that transforms into elegant, fine-textured sparkling wines.

The wine's delicate strawberry and citrus profile with creamy brioche textures makes it perfect for seafood canapés, fresh oysters, or salmon dishes. Its light body and fine bubbles complement soft cheeses, berry desserts, and Asian cuisine with subtle spice levels. The minerally backbone and crisp finish also pair beautifully with charcuterie, particularly prosciutto or bresaola, where the wine's acidity cuts through rich flavours while the fruit notes provide harmony.
