This producer has been making reds like this in the Clare Valley for decades. And this shiraz is exactly why they keep getting invited back to every wine show they've ever even walked past. Clare Valley shiraz completely in its element - spicy, full-bodied, generous and dark fruited.

Why do we love this wine?

Rich, generous and completely inviting - dark plum, blackberry, cocoa and mocha on the nose, with liquorice, aniseed and a warm kitchen spice character woven through a fleshy, supple palate. The tannins are fine and perfectly weighted, and the finish is long, balanced and just a little bit addictive. Clare Valley shiraz doing what Clare Valley shiraz does best. At a price that makes grabbing more than one bottle the obvious move.

Frequently Asked Questions

Clare Valley shiraz is renowned for its elegant balance between power and finesse, often displaying more structured tannins and spice complexity than warmer regions. The cooler climate and unique soil composition allow shiraz to retain natural acidity while developing rich fruit flavours. This Pauletts example showcases the region's signature style with its fine tannins and integrated spice character, proving why Clare Valley is considered one of Australia's premium shiraz regions.

Serve this wine at 16-18°C to allow the complex flavours of dark plum, blackberry and mocha to fully express themselves. Decant for 30-60 minutes before serving to soften the tannins and enhance the liquorice and spice notes. The wine's rich, fleshy character pairs beautifully with grilled meats, aged cheeses, or hearty stews where its full body can complement rather than overpower the food.

A 95-point score from the Melbourne Royal Wine Awards indicates exceptional quality, placing this wine in the top tier of Australian wines. The Gold Medal recognition confirms its outstanding character and technical excellence. These prestigious awards are judged by leading wine professionals, so this rating suggests the wine demonstrates perfect balance, complexity, and regional typicity that sets it apart from thousands of other entries.

This 2021 shiraz is drinking beautifully now, with its supple palate and perfectly weighted tannins indicating optimal integration. However, Clare Valley shiraz typically ages gracefully for 8-12 years, developing more complex tertiary flavours of leather, earth, and dried herbs. The wine's fine tannin structure and balanced acidity suggest it will reward cellaring, though its current approachability makes it equally enjoyable for immediate consumption.

The wine's cocoa, mocha, and warm kitchen spice profile makes it ideal for rich, savoury dishes with complementary flavours. Try it with barbecued lamb with rosemary, beef short ribs with dark chocolate mole, or aged hard cheeses like vintage cheddar. The liquorice and aniseed notes also pair wonderfully with Mediterranean herbs like fennel and thyme, making it perfect for slow-cooked osso buco or herb-crusted venison.
