Why do we love this wine?

From the prized southern part of the sun-drenched Barossa, steeped in quality grown shiraz (you know we’ve done the research). It’s right here, where the surrounding views offer the picture-perfect painting; a diversity of colours from the tree leaves to the soils, which in turn give our favourite grape - shiraz. A blend of hand-selected low-yielding parcels, you’ll find generous flavours of black fruit, olive and pepper spice, backed by silky tannins, yet the wine is intense on the palate, with a great depth and length.

Frequently Asked Questions

The southern Barossa enjoys a slightly cooler climate than the valley floor, which allows Shiraz grapes to ripen more slowly and develop greater complexity. This region's diverse soils - from red clay to sandy loam - contribute to the wine's distinctive character, while the hand-selected low-yielding parcels ensure concentrated flavours. The combination of these factors creates the perfect conditions for producing premium Shiraz with both power and elegance.

The plum flavours come naturally from the ripe Shiraz fruit, while chocolate notes develop through the wine's full-bodied structure and tannin integration. Vanilla characteristics typically emerge from oak barrel ageing, which also helps marry the fruit and spice elements together. These flavours work harmoniously with the black fruit and pepper spice mentioned in the tasting notes, creating a complex flavour profile that evolves as the wine opens up in the glass.

Scores of 95-96 points from respected wine critics like Wine Orbit and Wine Pilot indicate this is an exceptional wine that stands out even among premium Barossa Shiraz. These ratings suggest the wine demonstrates outstanding balance, complexity, and ageing potential. The consistency across multiple high ratings, plus the Gold Medal recognition, confirms this isn't just a one-off success but a wine that consistently delivers at the highest level.

Given its full-bodied structure, silky tannins, and the quality indicated by those outstanding ratings, this 2021 Shiraz has excellent cellaring potential of 10-15 years or more. The wine's intensity and depth suggest it will continue developing complexity over time, with the tannins softening and the fruit, spice and oak elements integrating further. However, it's already drinking beautifully now if you prefer more vibrant fruit flavours.

This wine's rich black fruit flavours and pepper spice make it perfect for grilled red meats, particularly lamb with rosemary or beef with cracked pepper. The chocolate and vanilla notes complement dishes with earthy mushrooms or rich sauces, while the wine's full body can stand up to strong cheeses like aged cheddar. The olive notes mentioned in the description also make it surprisingly good with Mediterranean-style dishes featuring herbs and olive tapenade.
