Mataro, also known as Mourvèdre, is a Mediterranean variety that thrives in Australia's warm climates, particularly the Barossa Valley. Unlike Shiraz or Cabernet Sauvignon, Mataro develops distinctive earthy, gamey characteristics alongside its dark fruit flavours. It's known for producing wines with firm tannins and savoury complexity that can age beautifully for decades.

The Barossa's warm, dry climate and diverse soil types create perfect conditions for Mataro to ripen fully while retaining its characteristic structure. The region's old vine plantings, some dating back over a century, produce concentrated fruit with the earthy minerality that defines quality Barossa Mataro. This terroir allows the variety to express both power and finesse.

Decant this Mataro 30-60 minutes before serving to allow its concentrated flavours to open up fully. Serve at cellar temperature (16-18°C) in large Bordeaux-style glasses to capture its complex aromatics. The wine's structure and tannins make it perfect for pairing with grilled meats, game, or aged cheeses.
