This is an old-school, proper GSM from McLaren Vale. This is where the region's Mediterranean vibes and the producer's five generations of winemaking know-how come together in spectacular fashion. We can't mention the name of the producer, but let's just say that these guys are firmly a household name. Don't miss out, this is an absolute belter!

Why do we love this wine?

The grenache brings plush, juicy texture. Shiraz adds backbone and grip. Mourvèdre (or mataro) rounds it all out with depth and spice. You're getting dark fruit richness with whispers of Christmas cake, cinnamon and clove - the kind of aromatics that make you want to pour another glass before you've even finished pouring the first. On the palate it's smooth, generous and well-structured, with tannins that feel soft and slippery rather than chunky or blocky. The finish goes the distance, which is always a good sign. Brilliant with slow-cooked lamb, a big bowl of pasta, or paella if you're feeling fancy. Equally good on its own when you just want something to get the job down.

Frequently Asked Questions

McLaren Vale's warm Mediterranean climate and diverse soils create ideal conditions for Rhône varieties like grenache, shiraz, and mourvèdre. The region's ability to ripen these varieties fully while maintaining freshness results in GSM blends with exceptional balance - the grenache provides juicy fruit, shiraz adds structure and spice, while mourvèdre contributes earthy complexity and tannin backbone. This combination showcases McLaren Vale's reputation as Australia's premier Rhône-style wine region.

Serve this GSM at cellar temperature (16-18°C) to allow the complex spice notes and fruit flavours to fully express themselves. Decanting for 30 minutes will help soften the tannins and open up the Christmas cake aromatics. The wine's medium body and smooth texture make it versatile for both casual drinking and food pairing, particularly with Mediterranean dishes that complement its Rhône heritage.

The wine's blend of dark fruit richness and warming spices makes it perfect for hearty, flavourful dishes. Slow-cooked lamb showcases the wine's structure, while pasta with rich tomato-based sauces complements the fruit-forward grenache component. The mourvèdre's earthy depth pairs beautifully with paella's complex flavours, and the overall spice profile works wonderfully with Middle Eastern or North African cuisine featuring cinnamon and clove.

The 2021 vintage in McLaren Vale was marked by ideal growing conditions with a cool, wet winter followed by a warm, dry growing season. This allowed for excellent fruit development and concentration while maintaining natural acidity. The vintage produced wines with great balance between power and elegance, making it particularly successful for GSM blends where each variety could reach optimal ripeness without losing freshness or developing excessive alcohol levels.

This GSM is drinking beautifully now with its soft, approachable tannins, but has the structure to develop over 5-8 years. The grenache component provides immediate fruit appeal, while the shiraz backbone and mourvèdre depth will integrate further with time. Peak drinking is likely between 2024-2029, when the spice elements will become more harmonious and the wine will develop additional savoury complexity while retaining its core fruit character.
