Why do we love this wine?

Rarely do you open wine when it’s in the perfect drinking window, but alas, we have one for you. After a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait ten years.

What is a Black Market deal?

Black Market deals are only made possible if we don’t reveal the maker’s brand on site. The wines are the genuine article – absolutely no cleanskins or fake brands, just dangerously good value. You won’t find out what it is until it hits your doorstep, but you won’t regret it. Just keep it on the down low.

Frequently Asked Questions

After a decade of careful cellaring, this Cabernet has reached that sweet spot where its initially firm tannins have mellowed into silky perfection while retaining the wine's structural integrity. The extended bottle age has allowed complex tertiary flavours like cigar box and olive tapenade to emerge alongside the primary dark berry fruit, creating a harmonious balance that exemplifies why premium Cabernet Sauvignon rewards patient collectors. This timing represents the culmination of the wine's evolution from youthful power to mature elegance.

Coonawarra's famous terra rossa soil - a thin strip of red earth over limestone - creates ideal drainage and mineral complexity that's reflected in this wine's noted 'mineral warmth'. The region's cool climate allows Cabernet Sauvignon to ripen slowly while maintaining natural acidity, resulting in wines with exceptional structure and longevity. This geological foundation, combined with the maritime influence from the nearby Southern Ocean, produces Cabernets with a distinctive eucalyptus character and the ability to age gracefully for decades, as demonstrated by this 2014's current peak condition.

These rich, dessert-like flavours emerge through the Maillard reaction and oxidative processes that occur during extended bottle ageing, transforming the wine's primary fruit into more complex, concentrated notes. The chocolate characteristics often develop from the interaction between tannins and fruit compounds, while fruitcake flavours arise from the concentration and caramelisation of berry fruits combined with spice elements. In this 2014, these evolved flavours work alongside the vanilla notes from oak integration to create a sophisticated flavour profile that showcases the wine's journey from fresh fruit to mature complexity.

A 96-point score from Wine Orbit places this Cabernet in the 'outstanding' category, indicating exceptional quality that represents the top tier of Australian wine. Wine Orbit's rigorous tasting methodology focuses on technical excellence, regional typicity, and age-worthiness - all qualities this 2014 demonstrates through its perfect drinking window timing and complex flavour development. This score suggests the wine not only meets but exceeds expectations for premium Coonawarra Cabernet, particularly impressive given that many wines peak and decline before reaching such acclaim a decade post-vintage.

Decant this wine 30-60 minutes before serving to allow the complex aromatics to fully express themselves after a decade in bottle, and serve at 16-18°C to showcase both its fruit concentration and evolved tertiary characters. The wine's full-bodied nature and softened tannins make it perfect for rich dishes like aged beef, lamb with herbs, or strong cheeses that can match its intensity without overwhelming the delicate cigar box and olive tapenade nuances. Given its peak drinking status, this wine should be enjoyed within the next 2-3 years while these perfectly integrated flavours remain in harmony.
