Why do we love this wine?

This is Beechworth showing off - with precision, finesse and a serious sense of place. The blend is led by merlot and cabernet franc, supported by cabernet sauvignon, malbec, petit verdot and carmenère. It’s the kind of detailed, structured red that'll reward patience, but already shows its pedigree from the first pour. Fermented wild on skins for four weeks, matured in oak for two years, and bottled without filtration, this is hands-off winemaking with high-impact results. The nose is all blackberries, currants and just a flick of green capsicum, while the palate brings acidity, grip and drive in equal measure. There’s spice, there’s cigar box, and there’s real length. It's a powerful, youthful wine right now, but showing all the signs of a wine that could age for anywhere from 10-25 years.

Frequently Asked Questions

This blend is led by merlot and cabernet franc rather than the traditional cabernet sauvignon dominance, creating a more approachable yet structured profile. The Beechworth terroir adds distinctive Australian character with its granite soils and cool climate, while the inclusion of petit verdot and carmenère provides additional complexity and spice notes rarely found in classic Bordeaux blends. The wild fermentation and unfiltered bottling also preserve more of the vineyard's natural expression.

While this wine is already showing its pedigree and can be enjoyed now, it's built for the long haul with 10-25 years of ageing potential. The full-bodied structure, natural acidity, and tannin grip suggest it will develop greater complexity and integration over the next 5-7 years. For optimal drinking, consider cellaring until 2028-2030 when the youthful power will have mellowed into elegant maturity, though patient collectors could hold it much longer.

The wine's structured tannins and blackberry-currant profile make it ideal for rich, protein-heavy dishes like slow-braised beef, lamb shanks, or aged steaks. The hint of green capsicum and cigar box notes complement earthy flavours like mushroom risotto or game meats beautifully. Given its Beechworth origins and natural winemaking approach, it also pairs wonderfully with local Australian produce like kangaroo or venison.

Sorrenberg has earned its Five Red Star Halliday rating through consistent excellence and pioneering work in Beechworth's cool climate viticulture. Their hands-off winemaking philosophy, including wild fermentation and minimal intervention techniques, produces wines that truly express their unique granite-based terroir. The winery's commitment to traditional methods like extended skin contact and unfiltered bottling has established them as leaders in premium Australian wine production.

Wild fermentation uses naturally occurring yeasts from the vineyard rather than commercial strains, creating more complex flavour development and better integration with the Beechworth terroir. This process, combined with four weeks on skins, develops the wine's distinctive spice notes and enhances its textural complexity. The natural fermentation also contributes to the wine's ageing potential, as the diverse yeast populations create more stable compounds that evolve gracefully over time.
