Why do we love this wine?

This is the style of shiraz that made the world take notice of this ripper region. Simon 'Sorby' Adams is the master craftsman behind this wine (can you say, ex-head winemaker at Yalumba?), so it's no surprise that this is a seriously high calibre wine. Rich expressions of blackberry, plum, chocolate, spices and cedar from the use of 30% new French oak. After four years cellaring time, it’s drinking beautifully now, but has another decade of prime left in it for those patient types. This one is a bestseller for a reason, we invite you to find out for yourself.

Wine Orbit

"Gracefully rich and opulent, the enticing bouquet shows dark fruit intensity, cocoa, baking spice, and cedar characters. The palate is equally impressive with outstanding weight and richly textured mouthfeel, superbly complemented by layers of fine tannins. Sturdy and mouth-filling with a sustained, satisfying finish. At its best: 2038. 95 Points" - Wine Orbit

"Mighty good year in the Barossa was ’21, and this excellent shiraz shows all that you might expect from such a good season. There are notes of blackberry, cocoa, a little dark chocolate, and a nice ethereal cedary lift. The palate is seamlessly textured, quite plush with a liqueur cherry and slightly earthy savoury notes to offset. As with most of Adams’ wines, it gets a decent hit of oak, which in this case was 36 months in French. The result, though, is a harmoniously blended and composed wine that expresses the Barossa beautifully. 95 points" - Ray Jordan, Wine Pilot

Frequently Asked Questions

This wine showcases the signature Barossa Valley style that put Australian Shiraz on the world map, crafted by Simon 'Sorby' Adams, former head winemaker at the prestigious Yalumba estate. The combination of old vine fruit and 30% new French oak creates exceptional complexity, while the 95-point Wine Orbit rating confirms its world-class status. It represents the pinnacle of what makes Barossa Shiraz legendary - power, elegance, and remarkable aging potential.

With four years of careful cellaring already behind it, this wine is drinking beautifully now but has another decade of prime drinking ahead. Premium Barossa Shiraz like this develops incredible complexity over time, with the tannins softening and secondary flavors of leather, tobacco, and earth emerging. The high-quality French oak and concentrated old vine fruit provide the structure needed for extended aging, making it perfect for special occasions years from now.

The rich blackberry, plum, and mocha flavors make this an ideal match for robust dishes like grilled ribeye, lamb shanks, or aged hard cheeses. The chocolate and spice notes from French oak complement barbecued meats beautifully, while the wine's full body can stand up to rich sauces and game meats. For vegetarian options, try it with mushroom-based dishes or dark chocolate desserts that echo the wine's mocha characteristics.

As former head winemaker at Yalumba, one of Australia's most respected wine families, Sorby Adams brings decades of expertise in crafting premium Barossa wines. His experience with old vine Shiraz and understanding of French oak integration shows in this wine's exceptional balance and complexity. This pedigree explains why the Reverend Canon consistently achieves high ratings and bestseller status - it's crafted by someone who helped define modern Australian winemaking.

The combination of black cherry, blood plum, and mocha creates a classic Barossa flavor profile that balances fruit intensity with sophisticated oak influence. These flavors indicate a wine with both immediate appeal and long-term complexity, where the dark fruit provides richness while the mocha notes from French oak add elegance. This style represents the evolution of Australian Shiraz from simple fruit bombs to nuanced, cellar-worthy wines that rival the world's best.
