From a tiny, handpicked parcel of old-vine Eden Valley shiraz, this outstanding shiraz has also been given the kid gloves in the winery. New French oak, whole cluster fermentation imparts complexity and warming spices, and gives extra punchy fruit to the nose. 18 months in 40% new French oak gives this delicious shiraz a rich, vanilla and baking spice palate with layers of rich plums, mulberries and dark cherries on top. Full but elegant from the higher elevation of this premium Eden Valley vineyard. Delicious shiraz at a ridiculous discount.

This particular wine showcases that perfect balance - full-bodied richness with refined elegance from the premium high-altitude vineyard.

Whole cluster fermentation involves fermenting grapes with their stems intact, adding structural complexity and spice notes that complement the fruit. This technique contributes to the wine's warming spice character and creates additional tannin layers that integrate beautifully with the French oak aging. The stems also provide natural tannins that help create the wine's full but elegant mouthfeel, while adding subtle herbal and peppery nuances that enhance the dark fruit flavours.

Old vines typically refer to grapevines that are 30+ years old, with deeper root systems that access different soil layers and naturally produce lower yields of more concentrated fruit. These mature vines create wines with greater complexity, intensity, and distinctive terroir expression compared to younger plantings. The old-vine fruit in this shiraz contributes to its rich, layered palate of plums, mulberries and dark cherries, delivering the depth and character that only comes from decades of vine maturity.

With 18 months in 40% new French oak and the structure from old-vine fruit, this 2022 shiraz has excellent aging potential over the next 8-12 years. The tannins will soften and integrate further, while the primary dark fruit flavours will evolve into more complex secondary characters like leather, tobacco, and earthy notes. The French oak influence will become more subtle over time, allowing the Eden Valley terroir and varietal character to shine through with greater complexity.

This full-bodied, oak-aged shiraz pairs beautifully with rich, flavourful dishes that can match its intensity and complement its spice profile. Think grilled lamb with rosemary, beef brisket, or aged hard cheeses where the wine's tannins cut through richness while the fruit flavours enhance the meal. The warming spices from whole cluster fermentation and French oak also make it excellent with barbecued meats or dishes featuring herbs like thyme and black pepper.
