This Shiraz comes from vines planted in the early 1970s, making it a piece of living Barossa history spanning over 50 years. The old vines produce concentrated, complex fruit with deep root systems that access unique terroir characteristics. Combined with the region's warm climate and ancient soils, these mature vines deliver the rustic, earthen aromatics and luscious fruit intensity that Barossa is renowned for worldwide.

Serve this wine at 16-18°C to allow the complex layers of plum, blackcurrant, and spice notes to fully express themselves. Decant for 30-60 minutes before serving to soften the tannins and enhance the Christmas cake spices and cacao undertones. The wine's full body and rich palate make it perfect for hearty dishes like grilled lamb, beef roasts, or aged cheeses that can match its intensity.

The wine's rich plum and blackcurrant flavours, combined with Christmas cake spices and black pepper, make it ideal for robust dishes. Try it with barbecued meats, especially lamb with rosemary, or slow-cooked beef stews where the wine's earthy characteristics complement the cooking methods.
