Don't worry, try one of these

Why do we love this wine?

Handpicked, basket pressed, whole bunch, wild yeasts, barrel matured. You don't need to know all the technical jargon about what any of that means, but you do need to understand that this is one carefully curated wine. The crème de la crop (literally) from a single vineyard in Barossa's Ebenezer sub-region, there's so much power and substance to this drop. It's no wonder that this winery has gained a real cult status, one of those 'if you know, you know' producers who punch well above their weight. This wine is sure to see you out over the next decade (we just wish you luck keeping your hands off for that long).

Frequently Asked Questions

Ebenezer is one of Barossa's most prized sub-regions, known for its ancient soils and exceptional terroir that produces Shiraz with remarkable concentration and complexity. This single vineyard wine showcases the unique characteristics of this specific site, where the combination of climate, soil composition, and elevation creates ideal conditions for premium Shiraz production. The cult status of this producer reflects their deep understanding of this terroir and their commitment to expressing its distinctive character through minimal intervention winemaking.

Wild yeasts, naturally present on grape skins and in the vineyard environment, create more complex fermentation patterns that contribute to the wine's unique flavour profile and textural depth. Unlike commercial yeasts that produce predictable results, wild yeasts work more slowly and create a broader spectrum of flavours, often adding earthy, spicy, and mineral notes that reflect the specific vineyard site. This traditional approach requires greater skill and patience but results in wines with more authentic terroir expression and greater aging potential.

Whole bunch fermentation involves fermenting grapes with their stems still attached, which adds structural tannins and aromatic complexity to the wine. The stems contribute subtle spice notes, enhance the wine's colour stability, and create a more integrated tannin structure that supports long-term aging. This technique is particularly effective with high-quality fruit like this single vineyard Shiraz, where the stems are fully ripe and contribute positive flavours rather than harsh, green characters.

This full-bodied Barossa Shiraz from 2017 is built for extended cellaring and should continue developing beautifully over the next decade or more. Premium Barossa Shiraz typically reaches its peak drinking window between 8-15 years after vintage, meaning this wine is entering its optimal phase now while still having plenty of development ahead. The combination of single vineyard fruit, traditional winemaking techniques, and barrel maturation has created a wine with the structure and complexity to reward patient cellaring.

The wine's blackcurrant fruit, earthy mushroom notes, and spice characteristics make it ideal for rich, savoury dishes that can match its intensity and complexity. Think slow-cooked lamb with rosemary and garlic, aged beef steaks, or hearty game dishes like venison or duck. The wine's full body and structured tannins also pair beautifully with strong cheeses, particularly aged hard cheeses, while its spice elements complement dishes featuring black pepper, herbs, or exotic spices.
